Tips for success
To achieve the most uniform crust, use superfine sugar, sometimes called caster sugar. Its fine grains melt much faster and more evenly than standard granulated sugar, which helps prevent burning the custard underneath while trying to caramelize the top.
Move the torch in a circular motion over the entire surface to ensure the heat is distributed evenly, avoiding holding the flame in one spot for too long.
If you do not have a kitchen torch, you can caramelize the sugar under your oven's broiler. Place the chilled ramekins on a baking sheet and slide them onto the highest rack, directly under the broiler.
Watch them extremely closely, as this method is very fast and the sugar can go from perfectly golden to burnt in seconds. This method is effective but requires constant vigilance to ensure the custard does not overheat.
Variations
- Cardamom Spiced: Add a half-teaspoon of finely ground green cardamom seeds to the cream while heating it to infuse the custard with a warm, citrusy, and herbal aromatic profile.
- Dark Chocolate Pistachio: Stir in 50 grams of high-quality melted bittersweet chocolate into the warm cream and pistachio base for a richer, more intense flavor profile that pairs beautifully with the floral notes.
Storage and make-ahead
- Fridge
- Keep in the refrigerator for up to 3 days in an airtight container.
- Freezer
- Freezing is not recommended as it ruins the delicate texture of the custard.
- Reheat
- Do not reheat; serve chilled with the freshly torched sugar crust.
Store any leftover un-torched custards in the refrigerator, covered tightly with plastic wrap to prevent them from absorbing other food odors. They will stay fresh for up to three days. Note that once the sugar crust is added, it will lose its crispness quickly due to the moisture in the custard, so it is best to torch the sugar only immediately before serving to maintain the signature texture.
This recipe is perfect for making ahead. You can prepare the custard, bake it, and chill it up to two days in advance. Keep the ramekins refrigerated until you are ready to serve. The sugar crust should always be applied at the very last minute, as the moisture from the custard will soften the caramelized sugar within an hour of application, ruining the crunch.
Serving ideas
Serve each crème brûlée in its individual ramekin, placed on a small dessert plate. A small silver spoon is the traditional accompaniment, perfect for cracking through the sugar crust.
You can add a few fresh, whole pistachios or a tiny sprig of fresh mint alongside the ramekin to enhance the presentation. The contrast of the emerald green pistachios against the golden crust makes for a visually stunning plate.
For a complete dessert experience, consider serving the crème brûlée alongside a small cup of strong black coffee or traditional mint tea. The bitterness of the coffee or the refreshing notes of the tea balance the richness of the custard beautifully.
Ensure the custards are served chilled, as the temperature contrast between the cool center and the warm, freshly torched sugar is the highlight of the dish.

Pistachio Orange Blossom Crème Brûlée

Ingredients
- 120 g roasted Sicilian pistachio paste
- 500 ml heavy cream
- 5 egg yolks
- 80 g granulated sugar
- 5 ml orange blossom water
- 5 tbsp superfine sugar
- crushed green pistachios for serving
- dried rose petals for serving
Instructions
- In a large mixing bowl, whisk together the roasted Sicilian pistachio paste, granulated sugar, and egg yolks until smooth and well combined. Gradually pour in the warm heavy cream while whisking constantly to temper the yolks. Stir in the orange blossom water until fully incorporated into the mixture.
- Strain the custard mixture through a fine-mesh sieve into your terra-cotta cazuelas or ramekins to ensure a silky texture. Place the ramekins in a deep baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake at 320°F (160°C) for 35 minutes until the edges are set but the center still jiggles slightly, reaching 160°F (71°C).
- Remove the ramekins from the water bath and allow them to cool to room temperature. Transfer to the refrigerator for at least 4 hours to chill completely. Before serving, sprinkle an even layer of superfine sugar over the top of each custard. Use a kitchen torch to melt and caramelize the sugar until it forms a deep golden, glassy crust. Garnish with crushed green pistachios and dried rose petals.
