Tips for success
For the most flavorful gravy, use a high-quality brown gravy—either homemade or a good store-bought brand. You can also enhance it by adding a splash of Worcestershire sauce or a spoonful of Dijon mustard, but keep it simple if you want the classic taste.
The pepperoncini brine is a secret weapon: adding a few tablespoons to the slow cooker brightens the sauce and adds a subtle kick.
If you have leftovers, the beef freezes beautifully. Store it in an airtight container with some gravy, and it will keep for up to 3 months.
To reheat, thaw overnight in the fridge and warm gently on the stovetop or in the microwave. The flavors only get better the next day. For a low-carb option, serve the beef over cauliflower rice or zucchini noodles instead of buns.
Variations
- Spicy Kick: Add 1/2 teaspoon crushed red pepper flakes or a diced jalapeño along with the pepperoncini for extra heat. You can also use hot pepperoncini or add a splash of the jar's brine.
- Herb-Infused: Tuck a few sprigs of fresh rosemary and thyme under the roast before cooking. The herbs infuse the gravy with an earthy aroma. Remove them before shredding.
- Creamy Version: Stir in 4 ounces of softened cream cheese during the last 30 minutes of cooking for a creamy, tangy sauce. This pairs beautifully with the pepperoncini and ranch flavors.
- Low-Carb Bowls: Skip the buns and serve the shredded beef over cauliflower rice or zucchini noodles. Top with extra pepperoncini and a sprinkle of fresh parsley.

Store leftover shredded beef in an airtight container in the refrigerator for up to 4 days. Keep the gravy and beef together to maintain moisture. Reheat gently on the stovetop over medium-low heat, adding a splash of beef broth or water if the gravy thickens too much. The beef also freezes well—see the freezer instructions below.
This recipe is perfect for meal prep. You can assemble the entire dish in the slow cooker insert the night before, cover it, and store it in the refrigerator.
In the morning, place the insert in the slow cooker and cook as directed—just add 30 minutes to the cooking time to account for the cold start. You can also cook the roast a day ahead, shred it, and keep it in the fridge; reheat gently before serving.
Serving ideas
Serve the shredded beef piled high on toasted brioche slider buns for a fun, crowd-pleasing meal. Add a slice of provolone or mozzarella and a few pepperoncini for extra indulgence.
For a heartier dinner, spoon the beef over mashed potatoes, egg noodles, or rice, and drizzle with extra gravy. A side of roasted vegetables or a crisp green salad balances the richness.
For a more casual spread, set out the beef and buns on a platter and let guests build their own sandwiches. Offer pickles, sliced onions, and extra pepperoncini on the side. The beef also makes a fantastic topping for loaded baked potatoes or nachos. Leftovers can be used in tacos, quesadillas, or stuffed into bell peppers for a creative twist.

Pepperoncini Ranch Chuck Roast: 10-Minute Crockpot Dinner

Ingredients
- 3 1/2 lb beef chuck roast
- 1 oz dry ranch mix
- 1 oz au jus gravy mix
- 10 whole pepperoncini peppers
- 1 cup rich brown gravy
- 2 tbsp unsalted butter
- 8 toasted brioche slider buns
Instructions
- Place the beef chuck roast in the center of the slow cooker. Sprinkle the dry ranch mix and au jus gravy mix evenly over the top of the roast. Scatter the whole pepperoncini peppers over and around the roast.
- Pour the rich brown gravy over the roast and seasonings. Dot the top with the unsalted butter. Do not stir—layering helps the flavors meld as it cooks.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the roast is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for food safety, but for shredding, cook until it exceeds 200°F (93°C). Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Remove the roast to a cutting board and let it rest for at least 10 minutes. This allows the juices to redistribute, making the meat more tender.
- Using two forks, shred the beef into bite-sized pieces. Return the shredded meat to the slow cooker with the gravy and peppers, stirring gently to coat.
- While the beef rests, toast the brioche slider buns in a toaster or under a broiler until golden brown. Set them aside on a plate.
- Spoon the shredded beef and peppers onto the toasted buns or onto a plate. Drizzle with extra gravy from the slow cooker. Serve hot.
