Tips for success
For the best flavor, use a good-quality beef brisket with a nice layer of fat. Trim the fat to about 1/4 inch thick, as it will render and baste the meat during cooking.
If you prefer a leaner dish, you can trim more, but the meat may be slightly less moist. Let the brisket come to room temperature for about 30 minutes before cooking to ensure even cooking.
The pepperoncini are what give this dish its signature tang. If you like more heat, add a few tablespoons of the brine from the jar.
For a milder flavor, remove the seeds from the peppers before adding them. You can also chop the peppers if you prefer them distributed throughout the meat, but leaving them whole adds a nice visual touch.
Variations
- Spicy Kick: Add 1-2 sliced jalapeños or a teaspoon of red pepper flakes along with the pepperoncini for extra heat. You can also use hot pepperoncini or add a splash of the brine from a jar of hot peppers.
- Herb-Infused: Add a few sprigs of fresh rosemary or thyme to the slow cooker before cooking. The herbs will infuse the meat and sauce with a fragrant, earthy note that complements the tangy peppers.
- Beefy Mushroom: Add 8 oz sliced mushrooms along with the brisket. The mushrooms will release their moisture and add an earthy, savory depth to the sauce. You may need to reduce the cooking time slightly if the slow cooker is very full.
- Smoky Twist: Replace the au jus mix with a packet of onion soup mix and add 1 teaspoon of smoked paprika. This adds a smoky, savory flavor that pairs well with the pepperoncini and butter.

Store leftover brisket in an airtight container in the refrigerator for up to 4 days. The meat will keep well and the flavors will continue to develop. Reheat gently in the microwave or in a skillet over low heat, adding a splash of beef broth or water if needed to keep the meat moist.
This recipe is perfect for meal prep. You can assemble the brisket in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. You can also cook the brisket a day ahead, shred it, and store it in the refrigerator. Reheat gently before serving.
Serving ideas
Serve the brisket over creamy mashed potatoes, polenta, or egg noodles to soak up the delicious jus. A side of crusty bread is also great for dipping.
For a lighter option, serve it over a bed of greens or with roasted vegetables. The tangy pepperoncini and rich sauce pair beautifully with a crisp green salad.
This brisket is also fantastic in sandwiches. Pile the shredded meat onto a soft bun and top with extra pepperoncini and a spoonful of the jus. It makes a hearty, satisfying meal that's perfect for game day or a casual dinner. Leftovers are great for tacos, quesadillas, or even on top of a baked potato.

Pepperoncini Ranch Butter Brisket: 5-Ingredient Slow Cooker

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 1 oz dry ranch dressing mix
- 1 oz dry au jus gravy mix
- 10 whole pepperoncini peppers
- 1/2 cup salted butter (1 stick)
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Sprinkle the dry ranch dressing mix evenly over the top of the brisket, followed by the dry au jus gravy mix. Scatter the whole pepperoncini peppers over the seasoned meat.
- Place the stick of salted butter on top of the seasoned brisket and peppers. Do not stir. Cover the slow cooker with the lid.
- Set the slow cooker to low and cook for 8 to 10 hours, until the brisket is fork-tender and easily shreds. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Using tongs, transfer the brisket to a cutting board and let it rest for at least 10 minutes. This allows the juices to redistribute.
- Using two forks, shred the brisket into bite-size pieces. Return the shredded meat to the slow cooker and stir to coat with the buttery pepperoncini jus. Serve hot, spooning extra jus over the top.
