Before you start

Before you start, make sure your slow cooker is clean and dry. Trim any excess fat from the brisket, but leave a thin layer to keep it moist. If your brisket is very large, you may need to cut it to fit in the slow cooker.

Have the ranch mix, au jus mix, pepperoncini, and butter ready to go. This recipe is truly dump-and-go, so there's no need to brown the meat first—the slow cooker does all the work.

Ingredients at a glance (5)
  • 3 1/2 lb beef brisket, trimmed
  • 1 oz dry ranch dressing mix
  • 1 oz dry au jus gravy mix
  • 10 whole pepperoncini peppers
  • 1/2 cup salted butter (1 stick)

Instructions

Layer and Season

  1. Layer the Brisket
Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Sprinkle the dry ranch dressing mix evenly over the top of the brisket, followed by the dry au jus gravy mix. Scatter the whole pepperoncini peppers over the seasoned meat.
Look for The brisket should be fully covered with the seasoning mixes and peppers.
Tip Trim excess fat from the brisket before cooking, but leave a thin layer for moisture.
  2. Add the Butter
Place the stick of salted butter on top of the seasoned brisket and peppers. Do not stir. Cover the slow cooker with the lid.
Look for The butter sits on top; it will melt and baste the meat as it cooks.
Tip Cutting the butter into pats helps it melt more evenly, though a whole stick works too.

At this point, the brisket sits in the bottom of the slow cooker, covered with the dry mixes and topped with the whole pepperoncini and the stick of butter. The butter is still solid, but it will melt as the slow cooker heats up.

The scene is simple and unassuming, but the flavors are already coming together. Check that the seasoning is evenly distributed and that the butter is placed on top.

Slow Cook

  1. Cook Low and Slow
Set the slow cooker to low and cook for 8 to 10 hours, until the brisket is fork-tender and easily shreds. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
Look for The meat should be deeply browned and tender, with bubbling juices around the edges.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Low heat is key for brisket; high heat can make it tough.
  2. Rest the Meat
Turn off the slow cooker. Using tongs, transfer the brisket to a cutting board and let it rest for at least 10 minutes. This allows the juices to redistribute.
Look for The meat should be very tender and hold together but pull apart easily.
Tip Resting is essential for a moist, juicy brisket.

After hours of slow cooking, the brisket is transformed. The meat is deeply browned, fork-tender, and surrounded by a bubbling, golden jus. The pepperoncini have softened and released their tangy brine, which melds with the butter and seasonings into a silky sauce. The aroma is rich and savory with a hint of heat. The meat should easily shred when pressed with a fork.

Shred and Serve

  1. Shred and Serve
Using two forks, shred the brisket into bite-size pieces. Return the shredded meat to the slow cooker and stir to coat with the buttery pepperoncini jus. Serve hot, spooning extra jus over the top.
Look for The meat should shred easily and look glossy with the pan sauce.
Tip For extra flavor, let the shredded meat sit in the jus for a few minutes before serving.

The shredded brisket is coated in the glossy, buttery jus. It looks incredibly tender and juicy, with pieces of pepperoncini clinging to the meat. The sauce is thick enough to cling to the spoon but still fluid. The dish is ready to be served over mashed potatoes or with crusty bread to soak up every last drop. The flavor is rich, tangy, and deeply satisfying.

Common mistakes

One of the biggest mistakes with slow cooker brisket is lifting the lid too often. Each time you open the lid, heat escapes and adds cooking time. Resist the urge to peek—trust the process.

Another pitfall is cooking on high instead of low, which can make the meat tough and dry. Stick to low and slow for the best results. Finally, don't skip the resting period after cooking; it's essential for a juicy, tender roast.

How to tell it’s done

The brisket is done when it is fork-tender and easily shreds with a fork. The internal temperature should read at least 145°F (63°C) when measured with an instant-read thermometer, but for the best texture, cook it until it reaches 190–200°F (88–93°C).

The meat should be deeply browned and the juices bubbling around the edges. Let the meat rest for at least 10 minutes before shredding to allow the juices to redistribute.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
