Tips for success
To take this dish to the next level, focus on the quality of the ingredients. Since filet mignon is a lean cut, the quality of the fat used for basting is incredibly important.
Using a high-quality European-style butter, which has a higher butterfat content and lower water content than standard butter, will yield a richer, foamier baste that caramelizes beautifully without burning too quickly. Additionally, ensuring the pan is completely preheated before adding the steaks helps build that coveted crust.
When basting, tilt the skillet slightly toward you so the melted butter pools at the bottom edge of the pan. This makes it much easier to scoop up large spoonfuls of the hot, garlic-infused butter to cascade over the top of the steaks.
Work quickly and continuously during the basting process to keep the butter moving, which prevents the milk solids from burning while ensuring the steaks are bathed in a steady stream of rich flavor. Keep the heat on medium-high to maintain a gentle foam.
Variations
- Blue Cheese Crust: Top the seared steaks with crumbled blue cheese during the last minute of resting, allowing it to melt into a rich, savory crust.
- Truffle Cauliflower Mash: Stir a teaspoon of high-quality white truffle oil into the mashed cauliflower just before serving for an earthy, luxurious aroma.
Storage and make-ahead
- Fridge
- Cooked steaks and mashed cauliflower can be stored in separate airtight containers in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended for cooked filet mignon as it degrades the texture, but mashed cauliflower can be frozen for up to 1 month.
- Reheat
- Reheat the steaks gently in a 250°F (120°C) oven until warm, and warm the cauliflower mash on the stovetop over low heat, stirring frequently.
Store any leftover filet mignon and mashed cauliflower in separate airtight containers to maintain their individual textures. Leftovers should be cooled to room temperature for no more than two hours before being placed in the refrigerator.
Properly stored, the cooked steak and cauliflower mash will keep well in the fridge for up to three days. Keep the pan jus in a small, sealed jar to drizzle over the meat when reheating.
While the filet mignon must be cooked fresh for the best texture and flavor, the side dishes can easily be prepared ahead of time. You can make the mashed cauliflower up to two days in advance and store it in the refrigerator.
Similarly, the carrots and asparagus can be roasted ahead of time. When ready to serve, simply reheat the cauliflower mash and roasted vegetables gently on the stovetop or in the oven while you sear the steaks.
Serving ideas
To serve, spoon a generous portion of the warm, creamy mashed cauliflower onto the center of each plate, smoothing it out with the back of a spoon to create a shallow well. Arrange the roasted asparagus spears and sweet roasted carrots neatly alongside the cauliflower. Gently place the rested, juicy filet mignon steak directly on top of the cauliflower bed, allowing any resting juices to mingle with the mash.
Just before serving, spoon the warm, savory pan jus generously over the steak, letting it cascade down the sides onto the cauliflower and vegetables. Garnish each plate with a fresh sprig of rosemary for an elegant, aromatic touch. Serve this gorgeous dish immediately while the steam is rising, allowing the rich, buttery flavors of the beef to shine.

Pan-Seared Filet Mignon with Creamy Mashed Cauliflower

Ingredients
- 2 (6-oz) filet mignon steaks
- 4 tbsp unsalted butter
- 3 cloves garlic, smashed
- 3 sprigs fresh rosemary, divided
- 2 cups mashed cauliflower, store-bought or made ahead
- 1 cup roasted carrots, store-bought or made ahead for serving
- 8 spears roasted asparagus, store-bought or made ahead for serving
Instructions
- Pat the filet mignon steaks dry with paper towels. Ensure the steaks rest out of the refrigerator for at most 30 minutes before cooking to take the chill off, which helps them sear more evenly in the hot skillet.
- Heat a heavy cast-iron skillet over high heat until it is smoking hot. Carefully place the dry steaks into the hot skillet and sear undisturbed for 2 to 3 minutes, allowing a deep, golden-brown crust to form before flipping.
- Reduce the heat to medium-high and add the unsalted butter, smashed garlic cloves, and two rosemary sprigs to the skillet. Tilt the pan slightly and continuously spoon the foaming butter over the steaks for 2 to 3 minutes until they reach a safe internal temperature of 145°F (63°C), then remove them from the heat and let them rest for at least 3 minutes.
- Transfer the basted filet mignon steaks to a warm plate. Let the meat rest for at least 3 minutes to allow the hot muscle fibers to relax and the savory juices to redistribute evenly throughout the steaks before slicing or serving.
- Keep the warm garlic-herb butter and steak juices in the skillet. Gently scrape up any caramelized browned bits from the bottom of the pan to incorporate them into the rich, savory pan jus.
- Spoon the warm mashed cauliflower onto plates, then arrange the warm roasted carrots and asparagus spears alongside. Place the rested steaks on top of the cauliflower, drizzle generously with the hot pan jus, and garnish with the remaining fresh rosemary.
