Tips for success
To achieve the ultimate crispy skin on the chicken thighs, leave them uncovered in the refrigerator for a few hours or overnight before cooking. This air-drying process dehydrates the skin, allowing it to crisp up much faster and more evenly in the hot skillet.
When searing, resist the urge to move the chicken around; let it sit undisturbed for several minutes so a proper crust can form before flipping.
If the cream sauce becomes too thick during the simmering process, splash in a tablespoon or two of chicken broth, dry white wine, or water to thin it out to the desired consistency. Conversely, if the sauce is too thin, let it simmer for an extra minute or two on low heat, or stir in a bit more grated parmesan cheese, which will naturally thicken the liquid as it melts.
Variations
- Spinach and Mushroom Cream: Add sliced mushrooms during the garlic sauté step, and stir in fresh baby spinach leaves just before returning the chicken to the skillet to wilt.
- Sun-Dried Tomato Cream: Stir in chopped sun-dried tomatoes along with the heavy cream to add a sweet, tangy contrast to the rich parmesan sauce.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freezing is not recommended, as the heavy cream sauce may separate and curdle upon thawing.
- Reheat
- Reheat gently in a skillet over low heat, adding a splash of milk or broth to restore the smooth consistency of the sauce.
Allow any leftover garlic parmesan chicken to cool to room temperature for no more than two hours to ensure food safety. Transfer the chicken and the cream sauce into an airtight container.
Store the container in the refrigerator for up to three to four days. Note that cream-based sauces can sometimes separate slightly when stored, but they can easily be brought back together during the reheating process with a little extra liquid.
While this dish is best enjoyed fresh to preserve the crispiness of the chicken skin, the sauce and chicken can be prepared ahead of time. You can sear the chicken and make the sauce a day in advance, storing them separately in the refrigerator.
When ready to serve, combine them in a skillet over low heat, basting the chicken with the sauce until the poultry is heated through and reaches the safe temperature.
Serving ideas
Serve this creamy garlic parmesan chicken hot, straight from the cast-iron skillet for a rustic, family-style presentation. Pair it with a bed of al dente pasta, such as fettuccine or angel hair, which will catch the luxurious cream sauce beautifully.
Alternatively, serve it alongside roasted garlic mashed potatoes or a crusty warm baguette to soak up every drop of the rich, savory garlic cream.
To balance the richness of the parmesan cream sauce, accompany the dish with a bright, crisp side. A simple green salad tossed with a light lemon vinaigrette works wonderfully, as the acidity cuts through the heavy dairy. Roasted asparagus, steamed broccoli, or green beans sautéed with a touch of lemon zest also make excellent, vibrant vegetable pairings that complement the savory chicken.

One-Skillet Creamy Garlic Parmesan Chicken Thighs

Ingredients
- 4 chicken thighs
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Heat a large cast-iron skillet over medium-high heat. Pat the chicken thighs dry. Place the chicken skin-side down in the hot skillet. Sear undisturbed for 8 to 10 minutes until the skin is golden and crispy, then flip and sear the other side for another 5 minutes. Transfer to a plate.
- Reduce the heat to medium. Leave about one tablespoon of chicken drippings in the skillet, pouring off any excess. Add the minced garlic to the skillet and sauté for 1 minute, stirring constantly to prevent burning, until fragrant and lightly golden.
- Pour the heavy cream into the skillet, scraping up the browned bits from the bottom. Bring to a gentle simmer over medium-low heat. Stir in the grated parmesan cheese until completely melted and the sauce is smooth and velvety.
- Return the chicken thighs and any accumulated juices to the skillet. Simmer gently for 8 to 10 minutes, spooning the cream sauce over the chicken to baste it. Cook until the chicken reaches an internal temperature of 165°F (74°C). Garnish with chopped fresh parsley before serving.
