Tips for success
For the creamiest sauce, use full-fat cream cheese and sharp cheddar. If you prefer a lighter version, you can use reduced-fat cream cheese, but the sauce may be thinner.
To save time, use pre-cooked bacon or bacon bits from the store. You can also chop the chicken and broccoli ahead of time.
To make this dish even more flavorful, toast the rotini in a dry skillet before adding it to the slow cooker. This adds a nutty depth.
Alternatively, you can add a dash of garlic powder or onion powder to the ranch seasoning for extra savory notes. For a crispy topping, sprinkle extra bacon and a handful of shredded cheese right before serving.
Variations
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a diced jalapeño with the chicken for a spicy version. You can also use pepper jack cheese instead of cheddar.
- Vegetable Swap: Replace broccoli with cauliflower florets or a mix of bell peppers and zucchini. Adjust cooking time so vegetables remain crisp-tender.
- Cheese Change: Use a mix of cheddar and Monterey Jack for a milder flavor. Smoked gouda adds a smoky depth that pairs well with bacon.
- Chicken Thighs: Use boneless, skinless chicken thighs instead of breasts. They are more forgiving and stay moist even if cooked a bit longer.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop, adding a splash of broth if needed.
- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave or on the stovetop until hot. Add a little chicken broth or milk to restore creaminess if the sauce has thickened.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will absorb some sauce as it sits, so you may want to add a splash of chicken broth when reheating. Reheat in the microwave or on the stovetop until piping hot.
You can assemble the base ingredients (chicken, ranch, broth, cream cheese, and bacon) in the slow cooker insert and refrigerate overnight. In the morning, place the insert in the slow cooker and cook as directed. This saves prep time on busy days.
Serving ideas
Serve this hearty pasta bake as a main dish with a simple green salad or garlic bread on the side. It's also great on its own, straight from the slow cooker.
For a complete meal, pair with roasted vegetables or a side of crusty bread to soak up the creamy sauce.
This dish is perfect for potlucks and family dinners. It holds well in the slow cooker on the 'keep warm' setting, making it easy to serve a crowd.
Garnish with extra bacon, chopped parsley, or a sprinkle of black pepper for a fresh finish.

Crockpot Chicken Broccoli Bacon Ranch Cheddar Rotini Bake

Ingredients
- 2 lb boneless skinless chicken breasts, diced
- 1 packet ranch seasoning mix
- 2 cups chicken broth
- 8 oz cream cheese, softened and cubed
- 1 cup cooked crispy bacon, chopped
- 16 oz rotini pasta
- 3 cups fresh broccoli florets
- 2 1/2 cups shredded sharp yellow cheddar cheese
Instructions
- Place the diced chicken in the bottom of a 6-quart slow cooker. Sprinkle the ranch seasoning over the chicken. Pour in the chicken broth, then add the cream cheese cubes and chopped bacon. Stir gently to combine, making sure the cream cheese is mostly submerged in the liquid.
- Cover the slow cooker and cook on LOW for 3 hours. The chicken should become tender and easily shred with a fork. The sauce will look creamy and slightly separated, but that's okay.
- After 3 hours, stir in the rotini pasta and broccoli florets. Make sure the pasta is submerged in the sauce as much as possible. If the mixture looks dry, add a splash of chicken broth or water.
- Sprinkle the shredded cheddar cheese over the top of the pasta and broccoli. Stir to combine. Continue cooking on LOW for 25 minutes, or until the pasta is al dente and the cheese is melted and creamy.
- Once the pasta is tender and the sauce is creamy, turn off the slow cooker. Serve the chicken broccoli bacon ranch rotini bake hot, spooning into bowls. Top with extra bacon bits if desired.
