Tips for success
For the best flavor, use high-quality olive oil and freshly grated Parmesan. The quality of the vegetables matters too—ripe, in-season tomatoes and firm zucchini will make a noticeable difference.
If you have time, let the sauce simmer a few extra minutes to deepen the flavors.
When tossing the pasta with the sauce, use tongs to gently lift and turn the pasta, ensuring every ribbon is coated without breaking.
If the sauce seems too thick, add a splash of pasta water. If it's too thin, let it simmer for a minute longer. Taste and adjust seasoning with salt and pepper before serving.
Variations
- Add Protein: For a heartier meal, add cooked chicken, shrimp, or Italian sausage to the skillet when you add the pasta. The protein will absorb the vegetable sauce and add extra flavor.
- Spicy Kick: Add a pinch of red pepper flakes or a chopped fresh chili with the vegetables for a subtle heat that complements the sweet tomatoes and creamy sauce.
- Herb Swap: Substitute fresh basil or oregano for the parsley. Adding a few torn basil leaves at the end gives a fragrant, summery twist.
- Vegan Option: Use a dairy-free Parmesan alternative and omit the cheese or use nutritional yeast for a cheesy flavor. The sauce will still be creamy and delicious.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or broth.
- Freezer
- Freeze the sauce (without pasta) for up to 3 months. Thaw overnight in the fridge and reheat before tossing with fresh pasta.
- Reheat
- Reheat leftovers in a skillet over medium heat, adding a splash of water or olive oil to loosen the sauce. Microwave in 30-second bursts, stirring in between.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta may absorb some sauce, so add a splash of water or olive oil when reheating to restore the creamy texture. Reheat gently on the stovetop or in the microwave until warmed through.
You can prepare the vegetable sauce up to 2 days ahead. Cook the vegetables and mash them into a sauce, then let it cool completely and refrigerate.
When ready to serve, reheat the sauce in a skillet, add the cooked pasta and cheese, and toss as directed. The pasta is best cooked fresh, but you can also cook it ahead and toss with a little oil to prevent sticking.
Serving ideas
Serve the tagliatelle hot, twirled into tall nests on warm plates. Garnish with a generous shower of chopped parsley and extra Parmesan cheese.
A drizzle of good olive oil over the top adds a final touch of richness. This dish pairs beautifully with a simple green salad and crusty bread.
For a heartier meal, serve alongside grilled chicken or shrimp. The creamy vegetable sauce also works well as a side dish for roasted meats. Leftovers can be enjoyed cold as a pasta salad or reheated gently. This recipe is versatile and delicious any way you serve it.

One-Pan Whole Vegetable Tagliatelle: Creamy Garden Pasta

Ingredients
- 4 tbsp olive oil
- 4 whole ripe tomatoes
- 1 whole zucchini
- 1 eggplant
- 2 peeled onions
- Salt to taste
- Freshly ground black pepper to taste
- 10 oz cooked tagliatelle egg ribbons
- 1/2 cup grated Parmesan cheese
- 1/2 cup pasta water
- 1/4 cup chopped fresh parsley
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the whole tomatoes, zucchini, eggplant, and peeled onions to the skillet. Season with salt and pepper. Cook, turning occasionally, until the vegetables are softened and the tomato skins begin to split, about 10 minutes.
- Using culinary tweezers or a fork, carefully lift the skins off the steamed tomatoes. Discard the skins. Continue cooking the peeled tomatoes and other vegetables for another 5 minutes, until everything is very soft.
- Use a potato masher to crush the stewed vegetables directly in the skillet. Mash until they form a thick, rustic sauce with a creamy, terracotta color. Stir well to combine the oil and vegetable juices into a cohesive sauce.
- Add the cooked tagliatelle ribbons to the skillet. Sprinkle with the grated Parmesan cheese and pour in the pasta water. Use tongs to toss everything together, coating the pasta evenly with the vegetable sauce. Cook over medium heat for 2-3 minutes, until the sauce clings to the pasta and is glossy.
- Remove the skillet from the heat. Twirl the tagliatelle into tall nests on serving plates. Shower with the chopped fresh parsley and extra grated Parmesan cheese. Serve immediately while hot and creamy.
