Tips for success
For the best flavor, use high-quality olive oil—it's a major component of the sauce.
If you prefer a smoother sauce, you can blend the tomatoes before adding the meatballs, but the video shows mashing them in the skillet. Adjust the red chili flakes to your heat preference, or omit them for a milder dish.
If you have leftover sauce, it's delicious tossed with any pasta or spooned over polenta. The meatballs can be made ahead and frozen.
When reheating, add a splash of water or broth to loosen the sauce. This dish is best served fresh, but leftovers can be stored in the refrigerator for up to 3 days.
Variations
- Spicy Sausage Version: Replace the beef meatballs with fresh Italian sausage, removed from casings and rolled into small balls. Add extra red chili flakes for a spicier kick. The sausage will add its own seasonings, so reduce the salt accordingly.
- Vegetarian Option: Omit the meatballs and add a can of drained chickpeas or white beans along with the tomatoes. Increase the simmering time to 15 minutes to allow the beans to absorb flavor. Use vegetable broth instead of pasta water for extra depth.
- Creamy Tomato Twist: After mashing the tomatoes, stir in 1/4 cup heavy cream (or coconut milk for a dairy-free version) to create a creamy rosé sauce. Cook for 2 minutes before adding the pasta. This adds richness and a luscious texture.
- Herb-Infused Oil: Before adding the tomatoes, gently warm the olive oil with a few sprigs of fresh thyme or rosemary and a clove of garlic. Let the herbs infuse for 5 minutes, then remove them. This adds a subtle aromatic layer to the sauce.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- This dish freezes well for up to 3 months. Cool completely, then transfer to a freezer-safe container.
- Reheat
- Reheat gently on the stovetop over medium-low heat, adding a splash of water or broth to loosen the sauce. Stir frequently until heated through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb some sauce, so add a splash of water or extra olive oil when reheating to revive the silky texture. Reheat gently on the stovetop or in the microwave.
The meatballs can be prepared up to 2 days ahead and kept refrigerated. You can also cook the entire dish, let it cool, and refrigerate for up to 3 days. Reheat gently on the stovetop with a little water. The basil should be added fresh after reheating.
Serving ideas
Serve this pasta hot, straight from the skillet, with a generous spoonful of the sauce and meatballs. A sprinkle of fresh basil on top adds color and aroma.
This dish is satisfying on its own, but a simple green salad with lemon vinaigrette would be a nice contrast.
For a family-style meal, place the skillet in the center of the table and let everyone serve themselves.
Pair with crusty bread to mop up any remaining sauce. A glass of medium-bodied red wine, like Chianti, complements the tomato and beef flavors beautifully.

One-Pan Tomato Mini Meatball Ditalini Pasta

Ingredients
- 1/2 cup olive oil
- 4 whole ripe tomatoes
- 20 seasoned ground beef mini meatballs
- 1 tbsp tomato paste
- 1 tsp salt
- Black pepper to taste
- Red chili flakes to taste
- 250 g ditalini pasta
- 1/4 cup pasta water
- Fresh basil leaves for garnish, to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the whole tomatoes and the seasoned ground beef mini meatballs. Cover the skillet and simmer gently for 12 minutes, until the tomatoes are soft and the meatballs are cooked through. The tomatoes will release their juices, creating a flavorful base.
- Using tweezers or tongs, carefully peel the soft skins off the tomatoes. Discard the skins. Stir in the tomato paste, salt, black pepper, and red chili flakes. Continue to cook for another 2 minutes, allowing the flavors to meld.
- With a spatula or wooden spoon, gently mash the roasted tomatoes into a silky, sweet ragù. Keep the meatballs intact. The sauce should be thick and glossy.
- Add the boiled ditalini pasta and the reserved pasta water to the skillet. Stir vigorously until every pasta ring is coated with sauce and the water has been absorbed, about 2 minutes.
- Remove the skillet from the heat. Garnish with fresh basil leaves. Serve immediately, scooping a heaping spoonful of pasta with meatballs into bowls.
