Tips for success

For the best cheese pull, use freshly shredded mozzarella and avoid overbaking. The cheese should be fully melted and bubbling, but not browned too deeply. If the top browns too quickly, cover loosely with foil for the remaining baking time. Also, letting the dish rest for 5 minutes before serving allows the cheese to set slightly, making it easier to serve while still keeping that glorious stretch.

To make ahead, assemble the dish up to the point of baking, cover, and refrigerate for up to 24 hours. When ready to bake, add 5-10 minutes to the baking time since the dish will be cold. If you have leftovers, reheat individual portions in the microwave or in a 350°F (175°C) oven until hot and bubbly. The dish also freezes well; see the storage notes for details.

Variations

  • Spicy Sausage Version: Swap the ground beef for 1 pound of spicy Italian sausage (casings removed) and reduce the salt to 1/2 teaspoon. The sausage adds heat and fennel flavor that pairs beautifully with the tomato sauce. Proceed with the recipe as written.
  • Vegetarian Option: Omit the meatballs and add 1 cup of sautéed mushrooms and 1 cup of spinach along with the pasta. Increase the sauce to 3 1/2 cups and bake until bubbly. The mushrooms provide a savory, meaty texture.
  • Three-Cheese Blend: Use 1 cup mozzarella, 1/2 cup provolone, and 1/2 cup parmesan for a richer, more complex cheese flavor. The provolone adds a buttery note that complements the tomato sauce.
  • Gluten-Free Adaptation: Use gluten-free ridged shell pasta and gluten-free breadcrumbs. Ensure the tomato sauce is certified gluten-free. Bake as directed, but check the pasta for tenderness, as gluten-free varieties may cook differently.

Storage and make-ahead

Fridge
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven until hot and bubbly.
Freezer
Freeze the unbaked casserole for up to 3 months. Thaw overnight in the refrigerator, then bake as directed, adding 5-10 minutes to the cooking time.
Reheat
Reheat individual portions in the microwave on high for 1-2 minutes, or in a 350°F (175°C) oven for 10-15 minutes.

Store any leftover bake in an airtight container in the refrigerator for up to 3 days. To reheat, place a portion in a microwave-safe dish and heat in 30-second intervals until hot, or reheat in a 350°F (175°C) oven for 10-15 minutes.

The pasta will absorb some sauce upon standing, so you may want to add a splash of water or additional tomato sauce when reheating to restore moisture. The dish is best enjoyed within 2 days for optimal texture of the pasta and cheese.

This dish is perfect for making ahead. Prepare the meatballs and cook the pasta as directed, then combine with the sauce in the skillet. Instead of baking, cover and refrigerate for up to 24 hours.

When ready to serve, bake at 375°F (190°C) for 25-30 minutes, or until bubbling and the meatballs reach 160°F (71°C). You can also freeze the unbaked casserole for up to 3 months; thaw overnight in the refrigerator before baking.

Serving ideas

Serve this one-pan bake straight from the skillet, spooning generous portions onto plates. The cheese pull is the star, so make sure to lift a spoonful to show off the stretch.

Pair with a crisp green salad dressed with lemon vinaigrette to cut through the richness, and a side of crusty bread for sopping up any extra sauce. A glass of medium-bodied red wine, such as Chianti or Sangiovese, complements the tomato and beef flavors beautifully.

This dish is hearty enough to be a main course on its own, but it also works well as part of a larger Italian-inspired spread. Serve it alongside garlic bread, roasted vegetables, or a simple arugula salad.

For a family-style dinner, place the skillet in the center of the table and let everyone help themselves. The leftovers are just as delicious the next day, cold or reheated, making it a great option for lunch.

Frequently asked questions

Can this dish be made ahead of time?
Yes, assemble the dish up to the point of baking, cover, and refrigerate for up to 24 hours. When ready to bake, add 5-10 minutes to the cooking time. The dish can also be frozen unbaked for up to 3 months; thaw overnight in the refrigerator before baking.
What type of pasta works best for this recipe?
Ridged shell pasta (conchiglie) is ideal because the ridges and shape hold onto the sauce and cheese. Other short pasta shapes like penne, rigatoni, or fusilli can be substituted, but adjust the cooking time to al dente to prevent mushiness.
Can the meatballs be made without eggs?
Yes, for an egg-free version, omit the egg and add an extra 2 tablespoons of breadcrumbs and 1 tablespoon of water or milk to help bind the mixture. The meatballs may be slightly more delicate, so handle them gently when searing.
How do you get the best cheese pull?
Use freshly shredded mozzarella rather than pre-shredded, which contains anti-caking agents that can prevent smooth melting. Bake just until the cheese is fully melted and bubbling, and let the dish rest for 5 minutes before serving to allow the cheese to set slightly, creating a stretchy pull.
What can be used instead of ground beef?
Ground turkey, chicken, or Italian sausage (casings removed) can replace the beef. If using poultry, be sure to cook to 165°F (74°C) for safety. Adjust the salt and seasonings to taste, as some sausages are already seasoned.

One-pan stuffed shell pasta and meatball bake with melted mozzarella and basil, served in a skillet

Ingredients

  • 1 lb ground beef (80/20)
  • 1/2 cup grated onion
  • 1/2 cup plain breadcrumbs
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground
  • 2 tbsp olive oil
  • 12 oz ridged shell pasta (conchiglie)
  • 3 cups spiced tomato sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh basil leaves, torn

Instructions

  1. In a large bowl, combine the ground beef, grated onion, breadcrumbs, beaten egg, minced garlic, oregano, salt, and black pepper. Mix gently with your hands until just combined; do not overwork. Roll the mixture into bite-sized meatballs, about 1 inch in diameter.
  2. Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add the meatballs in a single layer, being careful not to overcrowd. Sear for 4-5 minutes, turning occasionally, until browned on all sides. The meatballs do not need to be cooked through at this point.
  3. While the meatballs brown, bring a large pot of salted water to a boil. Add the shell pasta and cook according to package directions until al dente, usually 9-11 minutes. Drain and set aside. Reserve 1/2 cup of pasta water to adjust sauce consistency if needed.
  4. Once the meatballs are browned, reduce the heat to medium. Add the cooked shell pasta and the spiced tomato sauce to the skillet. Stir gently to coat the pasta and meatballs evenly with the sauce. If the mixture seems dry, add a splash of the reserved pasta water.
  5. Sprinkle the shredded mozzarella and grated parmesan evenly over the top of the pasta and meatball mixture. Cover the skillet with a lid or aluminum foil and let the cheese melt over low heat for 2-3 minutes, until the cheese begins to soften.
  6. Preheat the oven to 375°F (190°C). Transfer the skillet to the oven and bake uncovered for 15-20 minutes, until the cheese is molten and bubbling and the meatballs are cooked through. The internal temperature of the meatballs should reach 160°F (71°C).
  7. Remove the skillet from the oven and let it rest for 5 minutes. Scatter the torn fresh basil leaves over the top. The cheese will set slightly, making it easier to serve while still pulling into beautiful strands.
  8. Spoon the pasta and meatballs onto plates, making sure to include some of the molten cheese from the top. For the full effect, lift a spoonful of the cheesy pasta and let the cheese stretch before serving.
