Tips for success

For the best flavor, use a combination of beef and pork in the meatballs, and season generously with garlic, oregano, and fennel seeds. If using store-bought meatballs, look for ones that are well-seasoned and not too dry.

Browning the meatballs well is crucial; it adds a deep, savory flavor to the sauce. Do not skip this step, even if you are short on time.

When adding the penne, toss it gently to coat without breaking the meatballs. Use the reserved pasta water sparingly to loosen the sauce if needed.

The tomato paste is added at the end to give the sauce a richer color and a concentrated tomato flavor. Finish with a generous amount of fresh parsley and Parmesan; they brighten the dish and add a welcome contrast to the rich sauce.

Variations

  • Spicy Arrabbiata: Add 1/2 teaspoon red pepper flakes with the tomatoes and a pinch of sugar to balance the heat. Use hot Italian sausage meatballs instead of plain beef for extra spice and flavor.
  • Vegetarian Option: Replace the meatballs with plant-based meatballs or large portobello mushroom caps. Use a vegan Parmesan substitute and check that the pasta is egg-free. The braising method works the same.
  • Herb Garden: Add a handful of fresh basil leaves and a sprig of rosemary to the pan during the last 5 minutes of braising. Remove the rosemary before serving and garnish with extra basil.
  • Creamy Tomato: Stir in 1/4 cup heavy cream or mascarpone at the end, just before adding the pasta, for a richer, creamier sauce. Reduce the tomato paste to 1/2 tablespoon to keep the balance.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of water.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
Reheat
Reheat in a skillet over medium heat, adding a splash of water or broth to loosen the sauce, or microwave in 30-second bursts.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will absorb some sauce as it sits; add a splash of water or broth when reheating to restore the saucy consistency. Reheat gently on the stovetop or in the microwave, stirring occasionally, until heated through.

The meatballs can be made ahead and refrigerated for up to 2 days, or frozen for up to 3 months. The entire dish can also be assembled (without the pasta) and refrigerated for up to 1 day; then add the cooked pasta and reheat.

To freeze, cool the dish completely, transfer to a freezer-safe container, and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.

Serving ideas

Serve the penne hot, straight from the skillet, with extra Parmesan on the side. A simple green salad with a lemon vinaigrette is a perfect side to balance the richness. Crusty bread is also great for sopping up the extra sauce. This dish is hearty enough to be a complete meal on its own, but it also pairs well with roasted vegetables or a light soup.

For a family-style presentation, bring the skillet to the table and let everyone serve themselves. Garnish with a final sprinkle of parsley and Parmesan.

The leftovers are just as delicious the next day; the flavors meld even more overnight. This recipe is also great for meal prep, as it reheats well and tastes even better after a day in the refrigerator.

Frequently asked questions

Can this dish be made gluten-free?
Yes, use gluten-free penne pasta and ensure the meatballs are gluten-free (check labels or make homemade with gluten-free breadcrumbs). The rest of the ingredients are naturally gluten-free. Cook the gluten-free pasta according to package directions, as cooking times may vary.
Can the meatballs be made ahead of time?
Absolutely. Prepare the meatballs and refrigerate them for up to 2 days, or freeze for up to 3 months. When ready to cook, brown them directly from the fridge or freezer; add a few extra minutes if frozen. This makes the recipe even quicker on busy nights.
What can be used instead of zucchini?
Yellow squash, eggplant, or bell peppers are great substitutes. Cut them into similar size pieces, and adjust the braising time if needed. Eggplant may absorb more liquid, so add a splash of water or broth if the sauce seems dry.
Why does the sauce sometimes turn out watery?
Watery sauce can happen if the tomatoes release too much liquid or the pan is not covered tightly. To thicken, simmer uncovered for the last few minutes to evaporate excess liquid. Also, avoid overcooking the zucchini, as it can release water. Adding the pasta helps absorb some moisture.
Can this be made in a slow cooker?
Yes, brown the meatballs first, then transfer them to a slow cooker with the tomatoes and zucchini. Cook on low for 6-7 hours or high for 3-4 hours. Add cooked pasta at the end and stir in the tomato paste. Adjust seasoning before serving.

One-Pan Meatball Penne with Garden Vegetables

Prep 15 minCook 35 minTotal 50 minServes 6
Steaming penne pasta with meatballs and vegetables in a rich tomato sauce, garnished with parsley and Parmesan.

Ingredients

  • 1 1/2 lb seasoned meatballs
  • 4 whole tomatoes
  • 2 zucchini
  • 12 oz penne pasta
  • 1 tbsp tomato paste
  • Fresh parsley, chopped, for serving
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat a large deep skillet or Dutch oven over medium-high heat. Add the seasoned meatballs in a single layer and cook, turning occasionally, until browned on all sides, about 6 to 8 minutes. The meatballs do not need to be cooked through at this point; they will finish in the sauce.
  2. Add the whole tomatoes and zucchini to the pan, nestling them around the meatballs. The tomatoes can be left whole; they will break down as they cook. Stir gently to coat the vegetables in the pan juices.
  3. Cover the pan with a lid and reduce the heat to medium. Let the mixture braise gently for 20 minutes, until the meatballs are cooked through and the vegetables are tender. The tomatoes will release their juices and create a rich sauce.
  4. Check that the meatballs have reached an internal temperature of 160°F (71°C) using an instant-read thermometer. If they have not, continue braising for a few more minutes. The tomatoes should be soft and starting to fall apart.
  5. Bring a large pot of salted water to a boil. Add the penne and cook according to package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water.
  6. Add the drained penne to the skillet with the meatballs and vegetables. Stir in the tomato paste and toss everything together until the pasta is well coated in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
  7. Spoon the penne and meatballs onto serving plates or a large platter. Garnish generously with chopped fresh parsley and grated Parmesan cheese. Serve hot, with extra Parmesan on the side if desired.
