Tips for success
To elevate the flavor of this simple roast, try adding a splash of fresh lemon juice over the chicken and green beans right after they come out of the oven. The bright acidity cuts through the rich, savory chicken drippings and enhances the herbal notes of the rosemary and thyme.
Additionally, scraping up the browned bits from the bottom of the glass baking dish and tossing the potatoes in them before serving adds an incredible depth of savory flavor.
If you prefer extra-crispy potatoes, you can parboil the halved baby potatoes for about five minutes before tossing them with the garlic and herbs.
This softens their outer starch layer, which roughens up when tossed and creates a much crunchier exterior during roasting. Always make sure to dry the parboiled potatoes thoroughly, as any lingering water will prevent them from browning properly in the oven.
Variations
- Lemon-Herb Variation: Add fresh lemon slices and a squeeze of fresh lemon juice over the chicken and vegetables before roasting for a bright, citrusy twist.
- Spicy Garlic Variation: Toss the potatoes and chicken with a pinch of red pepper flakes along with the garlic and herbs to add a subtle, warming heat.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Ensure they cool within 2 hours of cooking.
- Freezer
- Freezing is not recommended for this dish, as the roasted green beans and potatoes will lose their pleasant texture and become mushy upon thawing.
- Reheat
- Reheat in a preheated oven at 350°F (175°C) for 10 to 15 minutes, or in the microwave in 30-second bursts until warmed through.
Allow the roasted chicken and vegetables to cool down to room temperature for no more than two hours after cooking to maintain food safety. Transfer the leftovers to an airtight container, keeping the chicken and vegetables together so the potatoes continue to absorb the savory juices.
Store the container in the refrigerator for up to three to four days. For best quality, do not freeze the cooked green beans, as they become watery.
You can easily prep this entire dish a day in advance to save time on busy nights. Wash, dry, and cut the baby potatoes, and trim the green beans. Store the prepped vegetables in separate airtight containers in the refrigerator. You can also toss the potatoes with the garlic and herbs the night before. Season the chicken and keep it covered in the fridge, ready to assemble and roast when you are.
Serving ideas
Serve this roasted chicken dish straight from the glass baking dish for a rustic, family-style presentation. The contrast of the golden-brown potatoes, vibrant green beans, and beautifully sliced chicken looks incredibly appetizing on the table.
You can garnish the dish with a few fresh sprigs of rosemary or thyme to emphasize the fresh herbs used in the cooking process. A light drizzle of pan juices over the sliced chicken adds a lovely gloss.
This complete meal pairs wonderfully with a simple, crisp green salad tossed in a light vinaigrette to balance the roasted flavors. Crusty artisan bread is also an excellent accompaniment, perfect for mopping up any flavorful pan juices left at the bottom of the baking dish. For a cozy touch, serve the meal with a side of warm gravy or a dollop of dijon mustard on the side of the plate.

One-Pan Herb-Roasted Chicken with Baby Potatoes

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 12 oz fresh green beans, trimmed
- 4 cloves garlic, minced
- 2 tbsp chopped fresh herbs (such as rosemary and thyme)
Instructions
- Preheat your oven to 400°F (200°C). In a medium mixing bowl, combine the halved baby potatoes, minced garlic, and half of the chopped fresh herbs. Toss the potatoes vigorously until every piece is thoroughly coated with the garlic and herbs.
- Pat the chicken breasts dry with paper towels. Season both sides evenly with the remaining fresh herbs. Place the seasoned chicken breasts in the center of a glass baking dish, and arrange the seasoned baby potatoes around them in a single layer.
- Place the baking dish in the preheated oven and roast for 20 minutes. The chicken will begin to turn golden on top, and the potatoes will start to soften and sizzle in the pan drippings. Prepare the green beans to be added to the dish.
- Carefully remove the baking dish from the oven. Scatter the green beans in the spaces around the chicken and potatoes, turning the potatoes over to ensure even browning. Return the dish to the oven and roast for an additional 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) on a meat thermometer.
- Transfer the roasted chicken breasts to a clean cutting board and let them rest for 5 minutes to allow the juices to redistribute. Leave the vegetables in the warm baking dish. Slice the chicken cleanly across the grain into even slices, then arrange them back in the dish alongside the golden potatoes and tender green beans.
