Before you start

Before you begin cooking, ensure all your ingredients are properly prepped. Wash and thoroughly dry the baby potatoes and green beans. Excess moisture on the vegetables will cause them to steam rather than roast, preventing them from getting those desirable roasted edges.

Halve the potatoes and trim the ends of the green beans. Mince the fresh garlic cloves and chop the herbs finely. Take the chicken breasts out of the refrigerator exactly twenty to thirty minutes before roasting to take the chill off, which promotes even cooking.

Ingredients at a glance (5)
  • 1 1/2 lb boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 12 oz fresh green beans, trimmed
  • 4 cloves garlic, minced
  • 2 tbsp chopped fresh herbs (such as rosemary and thyme)

Instructions

Seasoning and Preparation

  1. Season the Potatoes
Preheat your oven to 400°F (200°C). In a medium mixing bowl, combine the halved baby potatoes, minced garlic, and half of the chopped fresh herbs. Toss the potatoes vigorously until every piece is thoroughly coated with the garlic and herbs.
Look for The potatoes should be evenly speckled with herbs.
Tip Dry the potatoes completely with a clean towel before tossing to ensure they roast properly.
  2. Season the Chicken
Pat the chicken breasts dry with paper towels. Season both sides evenly with the remaining fresh herbs. Place the seasoned chicken breasts in the center of a glass baking dish, and arrange the seasoned baby potatoes around them in a single layer.
Look for Make sure the potatoes are in a single layer to ensure even roasting.
Tip Pound the thicker parts of the chicken breasts slightly to ensure they cook at the same rate.

By the end of this phase, the chicken breasts and baby potatoes should be thoroughly seasoned and neatly arranged in the glass baking dish.

The kitchen should already carry the sharp, aromatic scent of fresh garlic and chopped herbs. The potatoes should be well coated in the garlic and herbs, with no dry spots remaining, ready to hit the hot oven.

Roasting and Vegetable Addition

  1. Initial Roasting
Place the baking dish in the preheated oven and roast for 20 minutes. The chicken will begin to turn golden on top, and the potatoes will start to soften and sizzle in the pan drippings. Prepare the green beans to be added to the dish.
Look for You should hear a gentle sizzling sound from the baking dish.
Tip Keep the green beans cold in the refrigerator until they are ready to be added to the dish.
  2. Add Green Beans and Finish Roasting
Carefully remove the baking dish from the oven. Scatter the green beans in the spaces around the chicken and potatoes, turning the potatoes over to ensure even browning. Return the dish to the oven and roast for an additional 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) on a meat thermometer.
Look for The chicken must be golden brown and the green beans slightly blistered.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Insert the thermometer into the thickest part of the chicken breast for an accurate reading.

At the end of the roasting phase, the chicken breasts must be golden brown on top and register an internal temperature of 165°F (74°C). The baby potatoes should be tender when pierced with a fork, showing golden-brown caramelized edges. The green beans must be vibrant green and tender, sizzling gently in the aromatic pan drippings.

Slicing and Presentation

  1. Rest and Slice
Transfer the roasted chicken breasts to a clean cutting board and let them rest for 5 minutes to allow the juices to redistribute. Leave the vegetables in the warm baking dish. Slice the chicken cleanly across the grain into even slices, then arrange them back in the dish alongside the golden potatoes and tender green beans.
Look for The chicken should release clear, aromatic juices when sliced.
Tip A very sharp chef's knife will prevent the herb crust from tearing while slicing.

When the dish is complete, the sliced chicken breasts will look incredibly juicy, releasing aromatic steam as you press into them. The golden-brown potatoes and tender green beans should frame the sliced chicken beautifully in the glass baking dish. The entire meal is hot, fragrant, and ready to be served immediately from the pan.

Common mistakes

A common mistake is overcrowding the glass baking dish, which traps steam and prevents the potatoes from roasting properly. Ensure the potatoes are arranged in a single layer around the chicken.

Another error is overcooking the chicken breasts, which makes them dry and chalky. Always use a reliable meat thermometer to check the internal temperature rather than relying solely on visual cues or time, pulling the chicken out precisely at 165°F (74°C).

How to tell it’s done

To determine perfect doneness, insert a meat thermometer into the thickest part of the chicken breast; it must read 165°F (74°C) to be safe and juicy.

The baby potatoes should be easily pierced with a sharp knife or fork, showing a creamy interior and a golden skin. The green beans should be tender but still retain a slight snap when bitten, rather than being soft or mushy.

  • Poultry: 165°F (74°C) in the thickest part
