Tips for success
For the crispiest chicken skin, pat the thighs dry with paper towels before marinating. The marinade adds flavor, but excess moisture can prevent browning. Also, make sure the skillet is thoroughly preheated before adding the chicken; a hot pan ensures an immediate sear.
If you have time, marinate the chicken overnight in the refrigerator for even deeper flavor. The lemon juice helps tenderize the meat, but don't over-marinate (more than 24 hours) as the acid can break down the texture.
When cutting the feta, aim for 1-inch chunks. This size allows the feta to soften and brown without melting into the sauce. If you prefer a more intense lemon flavor, add the zest of one lemon to the marinade.
For a touch of heat, sprinkle red pepper flakes over the dish before serving. To make it a complete meal, serve with a simple Greek salad or warm pita bread to soak up the delicious juices.
Variations
- Add Vegetables: Toss in halved bell peppers, red onion wedges, or zucchini chunks along with the potatoes. They'll roast in the pan juices and add color and sweetness. Adjust cooking time slightly if needed.
- Use Chicken Breasts: Substitute bone-in, skin-on chicken breasts for the thighs. Cook at the same temperatures but reduce the second roast to 15-18 minutes, checking for doneness at 165°F (74°C). The breasts may cook faster, so monitor closely.
- Lemon-Herb Variation: Add fresh thyme or rosemary sprigs to the skillet along with the oregano. For a brighter flavor, zest one lemon and mix it into the marinade. This adds another layer of aromatic complexity.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes to the marinade for a subtle heat. Or, serve with a dollop of harissa paste on the side. The spice complements the lemon and feta beautifully.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will continue to develop, making it even more delicious the next day. To reheat, place in a 350°F (175°C) oven for 10-15 minutes, or until heated through. The potatoes may soften slightly, but the dish remains tasty. Avoid microwaving, as it can make the chicken skin soggy.
You can marinate the chicken and potatoes up to 24 hours in advance, keeping them in the refrigerator. This allows the flavors to meld beautifully. When ready to cook, let the mixture sit at room temperature for 15-20 minutes, then proceed with the recipe. You can also pre-cut the olives and feta, and have all your ingredients measured and ready. This makes the cooking process even quicker.
Serving ideas
Serve this dish straight from the skillet for a rustic, family-style presentation. The sizzling pan makes a stunning centerpiece. Spoon some of the pan juices over each portion to keep everything moist and flavorful.
A sprinkle of fresh oregano right before serving adds a pop of color and freshness. Pair with crusty bread to mop up the lemony, herby juices, and a simple green salad for a complete meal.
For a more elegant dinner, transfer the chicken, potatoes, olives, and feta to a large serving platter, arranging them artfully. Garnish with lemon wedges and fresh oregano sprigs.
This dish pairs beautifully with a chilled glass of white wine, such as a Greek Assyrtiko or a Sauvignon Blanc. The bright citrus and herbs complement the wine's acidity, while the creamy feta balances its minerality.
