Tips for success
For a more intense flavor, use a high-quality olive oil—it's a key ingredient. If you prefer a smoother sauce, blend the steamed vegetables with an immersion blender before adding the pasta.
To make the dish spicy, add a pinch of red pepper flakes with the boiling water. For extra richness, stir in a tablespoon of butter after the cheese melts.
The recipe is forgiving: you can swap in any soft vegetables like bell peppers or fennel. If you don't have a lid, cover the skillet with a baking sheet.
To prevent sticking, use a nonstick skillet or add a little more water. Leftovers can be reheated with a splash of water to loosen the sauce.
Variations
- Add Protein: For a heartier dish, add 1 cup of cooked shredded chicken or crumbled Italian sausage to the sauce after steaming the vegetables. Cook until heated through before adding the pasta.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a chopped fresh chili with the boiling water. For extra heat, drizzle with chili oil before serving.
- Herb Swap: Replace parsley with fresh basil or a mix of basil and oregano. Add the herbs just before serving to preserve their bright flavor.
- Creamy Version: Stir in 1/4 cup of heavy cream or crème fraîche after the pasta is cooked, before adding the cheese. This creates a richer, creamier sauce.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water to restore sauce consistency.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium heat with a splash of water or broth, stirring until hot. Or microwave in 30-second bursts, stirring between.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb more liquid as it sits, so add a splash of water or broth when reheating. The cheese may lose its stretch but will still be delicious.
The vegetables can be steamed up to 2 days ahead and stored in the refrigerator. When ready to cook, reheat the vegetables in the skillet with a little water, then proceed with adding the pasta. The entire dish is best served fresh, but it can be assembled and refrigerated before adding the cheese.
Serving ideas
Serve this pasta hot, straight from the skillet, with extra parsley on top. It's a complete meal on its own, but a simple green salad with lemon vinaigrette would brighten the plate.
Crusty bread is perfect for sopping up any extra sauce. For a heartier meal, add a side of grilled chicken or sautéed shrimp.
This dish shines as a weeknight dinner, but it's also elegant enough for a casual dinner party. The gooey cheese and glossy pasta are visually appealing.
Portion generously—it's satisfying and comforting. Pair with a light red wine or sparkling water with lemon. The leftovers make a delicious lunch the next day.

One-Pan Cheesy Steamed Vegetable Pasta

Ingredients
- 1 large whole tomato
- 1 whole green zucchini
- 1 slender eggplant
- 2 peeled onions
- 1/4 cup olive oil
- 1/2 cup water
- 10 oz tagliatelle pasta
- 1 cup boiling water
- 1 1/2 cups shredded kashar mozzarella cheese
- 1/4 cup chopped fresh parsley
Instructions
- Place the whole tomato, zucchini, eggplant, and peeled onions in a large skillet. Add the olive oil and water. Cover with a glass lid and bring to a simmer over medium heat. Steam for 10 minutes, or until the vegetables are fork-tender. Remove the lid and let cool slightly. Use tweezers or tongs to peel away the loosened skins from the tomato, zucchini, and eggplant. Discard the skins.
- Using a fork or potato masher, gently mash the steamed vegetables in the skillet until they form a chunky sauce. The onions will break down, and the tomato will release its juices. Stir to combine with the olive oil and any remaining liquid.
- Nestle the tagliatelle ribbons directly into the vegetable sauce. Pour in the boiling water. Increase heat to medium-high and bring to a gentle boil. Cook, stirring frequently, for 8-10 minutes, until the pasta is tender and has absorbed most of the liquid, creating a glossy sauce that coats the noodles.
- Remove the skillet from the heat. Sprinkle the shredded kashar mozzarella evenly over the pasta. Cover for 1-2 minutes to let the cheese melt into gooey ribbons. Uncover, scatter the chopped fresh parsley over the top, and serve immediately.
