Tips for success
For the best texture, use a combination of nuts and seeds as suggested, but feel free to swap in your favorites. Toasting the nuts and seeds before adding them enhances their flavor and crunch.
If the mixture becomes too sticky to handle, wet your hands slightly or let it cool for a few minutes before shaping. Use a sharp knife for slicing to get clean edges.
To make the roll extra special, drizzle melted dark chocolate over the sliced medallions before serving. You can also roll the log in cocoa powder or matcha powder for a different flavor.
For a festive touch, add dried cranberries or chopped apricots to the mixture. Store the roll in the refrigerator and slice only what you need to keep the remaining log fresh.
Variations
- Chocolate Date Roll: Add 2 tablespoons of unsweetened cocoa powder to the date mixture along with the nuts. You can also roll the log in cocoa powder instead of sesame and coconut for a chocolatey twist.
- Spiced Apple Roll: Replace the cardamom with 1 teaspoon of ground cinnamon and add 1/4 cup of finely chopped dried apples. The apple adds a chewy texture and a hint of tartness.
- Citrus Pistachio Roll: Add 1 tablespoon of orange zest and 1 teaspoon of orange blossom water to the date mixture. The citrus brightens the flavor and pairs beautifully with pistachios.
- Tropical Roll: Swap the walnuts and pumpkin seeds for macadamia nuts and dried pineapple. Use lime zest instead of cardamom for a tropical flavor profile.

This recipe is perfect for making ahead. Prepare the roll, wrap it tightly, and refrigerate for up to 2 weeks. You can also freeze the whole log or sliced medallions for up to 3 months.
Thaw in the refrigerator overnight before serving. The roll can be sliced and served straight from the fridge—no need to bring to room temperature.
Serving ideas
Serve the energy roll as a snack, dessert, or even a quick breakfast on the go. Slice the medallions thickly for a hearty bite, or thinner for a delicate treat. Arrange them on a platter for a party or pack them in lunchboxes. They pair well with coffee or tea, and a sprinkle of flaky sea salt on top enhances the sweetness.
For a more indulgent presentation, serve the medallions with a dollop of Greek yogurt or a drizzle of honey. They also make a great addition to a cheese board or a dessert table.
If serving at a gathering, consider cutting the log into smaller rounds for easy finger food. The roll is sturdy enough to travel, making it a great option for picnics or road trips.

No-Bake Date and Nut Energy Roll

Ingredients
- 2 cups pitted Medjool dates
- 2 tbsp unsalted butter
- 1/2 cup roasted pistachios
- 1/2 cup walnuts
- 1/4 cup pumpkin seeds
- 1/4 cup unsweetened shredded coconut
- 1/2 tsp ground cardamom
- 1/4 cup toasted white sesame seeds
- 1/4 cup unsweetened shredded coconut
Instructions
- Place the pitted Medjool dates and butter in a nonstick skillet over medium-low heat. Warm for 2 to 3 minutes, stirring occasionally, until the dates are soft and glossy. Use a spatula to mash the dates into a smooth, thick paste. The mixture should be cohesive and hold together when pressed.
- Remove the skillet from the heat. Add the roasted pistachios, walnuts, pumpkin seeds, shredded coconut, and ground cardamom to the warm date paste. Fold everything together with a spatula until the nuts and seeds are evenly distributed throughout the date mixture.
- Transfer the date-nut mixture to a sheet of plastic wrap or parchment paper. Shape it into a log about 2 inches in diameter, pressing firmly to compact the mixture. Wrap the log tightly and twist the ends to seal.
- Combine the toasted white sesame seeds and shredded coconut on a large plate. Unwrap the chilled log and roll it in the sesame-coconut mixture, pressing gently to coat the entire surface evenly. Re-wrap the log in plastic wrap and chill for at least 1 hour.
- Place the coated log in the refrigerator and chill for at least 1 hour, or until firm and sliceable. The chilling time allows the dates to set and makes slicing easier.
- Remove the chilled log from the refrigerator and unwrap it. Using a sharp chef's knife, slice the log into thick round medallions, about 1/2-inch thick. Serve immediately or store in an airtight container in the refrigerator.
