Before you start
Before starting, gather all the ingredients. Pit the dates if needed and measure out the nuts and seeds. Have a nonstick skillet, a spatula, plastic wrap, and a baking sheet ready.
If using whole nuts, roughly chop them so they are in smaller pieces, but leave some larger chunks for texture.
Toast the sesame seeds in a dry skillet over medium heat for a few minutes until fragrant, if they are not already toasted.
Ingredients at a glance (9)
- 2 cups pitted Medjool dates
- 2 tbsp unsalted butter
- 1/2 cup roasted pistachios
- 1/2 cup walnuts
- 1/4 cup pumpkin seeds
- 1/4 cup unsweetened shredded coconut
- 1/2 tsp ground cardamom
- 1/4 cup toasted white sesame seeds
- 1/4 cup unsweetened shredded coconut
Instructions
Warm and Combine
- Warm and Mash the DatesPlace the pitted Medjool dates and butter in a nonstick skillet over medium-low heat. Warm for 2 to 3 minutes, stirring occasionally, until the dates are soft and glossy. Use a spatula to mash the dates into a smooth, thick paste. The mixture should be cohesive and hold together when pressed.Look for The dates become shiny and easily mash into a thick, sticky paste.Tip If the dates are very dry, add a teaspoon of water to help them soften.
- Fold in the Nuts and SeedsRemove the skillet from the heat. Add the roasted pistachios, walnuts, pumpkin seeds, shredded coconut, and ground cardamom to the warm date paste. Fold everything together with a spatula until the nuts and seeds are evenly distributed throughout the date mixture.Look for The mixture becomes chunky and all the nuts and seeds are coated with date paste.Tip Let the mixture cool slightly before shaping if it is too sticky to handle.
The dates are soft and glossy, and the mixture is thick and sticky. The nuts and seeds are evenly distributed, and the paste holds together when pressed. The aroma is sweet and nutty with a hint of cardamom.
Shape and Coat
- Shape the LogTransfer the date-nut mixture to a sheet of plastic wrap or parchment paper. Shape it into a log about 2 inches in diameter, pressing firmly to compact the mixture. Wrap the log tightly and twist the ends to seal.Look for The log is firm and holds its shape when wrapped.Tip Use your hands to smooth the surface if there are any cracks.
- Coat the LogCombine the toasted white sesame seeds and shredded coconut on a large plate. Unwrap the chilled log and roll it in the sesame-coconut mixture, pressing gently to coat the entire surface evenly. Re-wrap the log in plastic wrap and chill for at least 1 hour.Look for The outside is covered with sesame seeds and coconut, creating a textured crust.Tip For a thicker coating, double the sesame-coconut mixture and roll twice.
The log is compact and holds its shape. The sesame-coconut coating adheres evenly to the surface. The roll is ready to be chilled, and the coating adds a pleasant texture.
Chill and Slice
- Chill Until FirmPlace the coated log in the refrigerator and chill for at least 1 hour, or until firm and sliceable. The chilling time allows the dates to set and makes slicing easier.Look for The log feels firm and holds its shape when pressed.Tip Chill for up to 2 hours if you prefer a firmer texture.
- Slice and ServeRemove the chilled log from the refrigerator and unwrap it. Using a sharp chef's knife, slice the log into thick round medallions, about 1/2-inch thick. Serve immediately or store in an airtight container in the refrigerator.Look for Each slice shows a mosaic of green pistachios and nuts suspended in the dark date fudge.Tip For clean slices, wipe the knife between cuts.
The log is firm and sliceable. The medallions show a beautiful mosaic of green pistachios and other nuts in the dark date fudge. The texture is chewy and the coating is crunchy.
Common mistakes
One common mistake is not mashing the dates thoroughly, leaving large chunks that make the roll crumbly. Ensure the dates are warmed enough to become a smooth paste.
Another mistake is overloading the mixture with too many nuts, which can make it hard to shape. Press the mixture firmly when forming the log to avoid air pockets. Also, do not skip the chilling time—it is crucial for clean slicing.
How to tell it’s done
The roll is done when it has chilled for at least 1 hour and feels firm to the touch. When you slice it, the medallions should hold their shape without crumbling.
The center should be dense and chewy, with the nuts and seeds evenly distributed. If the roll is too soft, chill it for another 30 minutes. The internal temperature is not applicable here, as this is a no-bake recipe.
