Tips for success
For the best texture, use Medjool dates that are soft and moist. If they are dry, soak them in warm water for 10 minutes and pat dry before using.
When warming the dates, keep the heat low to avoid caramelizing the sugars too much, which can make the paste hard and brittle after chilling.
To get perfectly round slices, roll the log as evenly as possible. Use your palms to apply even pressure while rolling. If the log becomes misshapen, reshape it with your hands before chilling.
For a cleaner cut, use a serrated knife and saw gently, or use a sharp chef's knife and wipe the blade between slices.
Variations
- Chocolate Date Roll: Add 2 tablespoons of cocoa powder to the date mixture along with the cardamom. Use a coating of cocoa powder mixed with shredded coconut for a chocolatey twist.
- Spiced Nut Roll: Replace cardamom with 1/2 teaspoon of ground cinnamon and a pinch of ground cloves. Add 1/4 cup of dried cranberries for extra sweetness and color.
- Seed Lover's Roll: Swap the walnuts for additional pumpkin seeds and add 2 tablespoons of sunflower seeds. Use a coating of toasted sesame seeds and flaxseed meal for extra crunch.
- Citrus Date Roll: Add 1 teaspoon of orange zest to the date mixture. Use a coating of finely chopped pistachios and shredded coconut for a bright, festive look.

Serving ideas
Serve the energy roll slices chilled or at room temperature. They make a perfect grab-and-go snack, lunchbox addition, or dessert with coffee or tea. Arrange the medallions on a platter for a party; they look beautiful with their mosaic cross-sections.
For a more indulgent presentation, dust the slices with a little extra cardamom or drizzle with melted dark chocolate (ensure it's dairy-free if needed). The roll also pairs well with fresh fruit or a dollop of yogurt. Store any leftovers in the fridge.

No-Bake Medjool Date and Nut Energy Roll

Ingredients
- 12 oz pitted Medjool dates
- 2 tbsp unsalted butter
- 1/2 cup roasted pistachios
- 1/2 cup walnuts
- 1/4 cup pumpkin seeds
- 1/2 cup unsweetened shredded coconut
- 1/2 tsp ground cardamom
- 1/2 cup toasted white sesame seeds
- 1/2 cup unsweetened shredded coconut
Instructions
- Place the pitted Medjool dates and unsalted butter in a nonstick skillet over medium-low heat. Warm, stirring occasionally with a spatula, until the dates soften and become glossy. Use the spatula to mash the dates into a thick, smooth paste. Continue cooking for 1 to 2 minutes until the mixture is cohesive and slightly darkened.
- Remove the skillet from heat. Add the roasted pistachios, walnuts, pumpkin seeds, 1/2 cup shredded coconut, and ground cardamom. Fold everything together with the spatula until the nuts and seeds are evenly distributed through the warm date paste. The mixture should hold together when pressed.
- Transfer the date-nut mixture onto a sheet of parchment paper. Use your hands to shape it into a tight, compact cylinder about 2 inches in diameter. Roll it back and forth on the parchment to smooth the surface and ensure the log is even. Press firmly to eliminate any air pockets.
- Spread the toasted white sesame seeds and the remaining 1/2 cup shredded coconut on a plate or in a shallow dish. Roll the log through the mixture, pressing gently to adhere. Continue rolling until the entire surface is fully encrusted with sesame and coconut.
- Wrap the coated log tightly in parchment paper or plastic wrap. Place it in the refrigerator for at least 1 hour, or until firm and sliceable. Chilling allows the dates to set and makes slicing clean and easy.
- Unwrap the chilled log and place it on a cutting board. Using a sharp chef's knife, slice the log into thick round medallions, about 1/2 inch thick. Wipe the knife clean between cuts for neat edges. Serve the slices immediately or store in an airtight container.
