Before you start

Before starting, measure all ingredients. Pit the dates if not already pitted. Toast the sesame seeds in a dry skillet over medium heat for 2 to 3 minutes, shaking often, until fragrant and lightly golden.

Set aside to cool. Have a sheet of parchment paper ready for rolling. Clear a space in the refrigerator for the log to chill.

Ingredients at a glance (9)
  • 12 oz pitted Medjool dates
  • 2 tbsp unsalted butter
  • 1/2 cup roasted pistachios
  • 1/2 cup walnuts
  • 1/4 cup pumpkin seeds
  • 1/2 cup unsweetened shredded coconut
  • 1/2 tsp ground cardamom
  • 1/2 cup toasted white sesame seeds
  • 1/2 cup unsweetened shredded coconut

Instructions

Warm and Mix

  1. Warm the Dates
Place the pitted Medjool dates and unsalted butter in a nonstick skillet over medium-low heat. Warm, stirring occasionally with a spatula, until the dates soften and become glossy. Use the spatula to mash the dates into a thick, smooth paste. Continue cooking for 1 to 2 minutes until the mixture is cohesive and slightly darkened.
Look for Dates are soft, glossy, and form a thick paste when pressed.
Tip Keep the heat low to avoid scorching the natural sugars.
  2. Fold in Nuts and Seeds
Remove the skillet from heat. Add the roasted pistachios, walnuts, pumpkin seeds, 1/2 cup shredded coconut, and ground cardamom. Fold everything together with the spatula until the nuts and seeds are evenly distributed through the warm date paste. The mixture should hold together when pressed.
Look for Nuts and seeds are evenly speckled throughout the sticky date mixture.
Tip Chop larger nuts into smaller pieces for easier rolling.

The dates should be soft, glossy, and form a thick paste when mashed. The nuts and seeds should be evenly distributed, and the mixture should hold together when pressed.

Smell the cardamom and toasted notes; the mixture should be fragrant and slightly sticky.

Shape and Coat

  1. Roll into a Log
Transfer the date-nut mixture onto a sheet of parchment paper. Use your hands to shape it into a tight, compact cylinder about 2 inches in diameter. Roll it back and forth on the parchment to smooth the surface and ensure the log is even. Press firmly to eliminate any air pockets.
Look for The log is firm, compact, and holds its shape without cracking.
Tip Wet your hands slightly to prevent sticking.
  2. Coat with Sesame and Coconut
Spread the toasted white sesame seeds and the remaining 1/2 cup shredded coconut on a plate or in a shallow dish. Roll the log through the mixture, pressing gently to adhere. Continue rolling until the entire surface is fully encrusted with sesame and coconut.
Look for The log is completely covered with a textured white coating.
Tip Pat the coating on with your hands for better adhesion.

The log should be tight, compact, and about 2 inches in diameter. The surface should be smooth and completely covered with sesame seeds and coconut. Press gently to ensure the coating adheres; no bare spots should remain.

Chill and Slice

  1. Chill the Log
Wrap the coated log tightly in parchment paper or plastic wrap. Place it in the refrigerator for at least 1 hour, or until firm and sliceable. Chilling allows the dates to set and makes slicing clean and easy.
Look for The log is firm to the touch and holds its shape when pressed.
Tip Chill longer for firmer slices, up to 24 hours.
  2. Slice and Serve
Unwrap the chilled log and place it on a cutting board. Using a sharp chef's knife, slice the log into thick round medallions, about 1/2 inch thick. Wipe the knife clean between cuts for neat edges. Serve the slices immediately or store in an airtight container.
Look for Each slice reveals a mosaic cross-section of green pistachios and dark date fudge.
Tip For cleaner slices, chill the log for at least 2 hours.

After chilling, the log should be firm to the touch. Slicing should produce clean rounds without crumbling. The cross-section should show a mosaic of green pistachios and dark date fudge, with a white sesame-coconut crust.

Common mistakes

A common mistake is overworking the mixture, which can make the dates too sticky and difficult to roll. If the mixture is too sticky, chill it for 15 minutes before shaping.

Another issue is slicing too soon; the log must be fully chilled or it will crumble. Use a sharp knife and wipe it between cuts for clean edges. Avoid using low-quality dates that are dry; they won't mash well.

How to tell it’s done

The roll is done when the log is firm enough to slice cleanly. After chilling for at least 1 hour, it should hold its shape and cut into neat rounds.

The interior will be dense and fudge-like, with visible pieces of pistachios and other nuts. If the log is too soft, chill for another 30 minutes. The coating should stay intact, and each slice should show a mosaic of green and brown.
