Tips for success
For the cleanest slices, use a very sharp chef's knife and wipe the blade with a damp cloth between cuts. If the log starts to soften while slicing, pop it back in the fridge for 10 minutes.
You can also roll the log in plastic wrap before chilling to create a perfectly smooth cylinder, which makes coating and slicing easier.
To make the coating stick better, lightly press the sesame-coconut mixture onto the log with your hands. If you prefer a more intense sesame flavor, toast the seeds until deeply golden, but watch them closely—they can burn quickly.
The rolls are best served at room temperature, so let them sit for 5 minutes after slicing if they are straight from the fridge.
Variations
- Chocolate-Date Rolls: Add 2 tablespoons of unsweetened cocoa powder to the date mixture along with the cardamom. Roll the chilled log in a mixture of cocoa powder and shredded coconut for a double-chocolate effect.
- Citrus-Spiced Rolls: Replace the cardamom with 1 teaspoon of orange zest and 1/2 teaspoon of ground cinnamon. Add the zest with the nuts for a bright, aromatic twist.
- Tropical Coconut Rolls: Swap the pistachios and walnuts for macadamia nuts and dried pineapple bits. Use coconut oil instead of butter and roll in extra shredded coconut for a tropical flavor.
- Spicy Ginger Rolls: Add 1 teaspoon of grated fresh ginger and 1/4 teaspoon of ground black pepper to the date mixture. Roll in a mixture of sesame seeds and finely chopped crystallized ginger for a kick.

Store the date nut rolls in an airtight container in the refrigerator for up to 2 weeks. Keep them in a single layer or separated by parchment paper to prevent sticking.
They can also be stored at room temperature for up to 3 days in a cool, dry place, but refrigeration keeps them firmer and extends their shelf life.
The entire roll can be made up to 3 days in advance. After coating, wrap the log tightly in plastic wrap and refrigerate. Slice just before serving to keep the edges neat. You can also slice the rolls and store them in an airtight container with parchment between layers; they will keep for up to a week in the fridge.
Serving ideas
Arrange the sliced medallions on a platter, cut side up, to showcase the mosaic of nuts. They make a beautiful addition to a dessert board or cookie platter. Serve with tea or coffee—the cardamom and date flavors pair wonderfully with chai or a strong espresso.
For a more decadent presentation, drizzle the slices with melted dark chocolate or a sprinkle of flaky sea salt just before serving.
These rolls are also lovely alongside a scoop of vanilla ice cream or a dollop of whipped cream. They are substantial enough to be a standalone treat, but equally delightful as part of a larger spread.

No-Bake Cardamom Date Nut Rolls

Ingredients
- 2 tbsp unsalted butter
- 3 cups chopped pitted Medjool dates
- 1/2 cup roasted pistachios, roughly chopped
- 1/2 cup walnuts, roughly chopped
- 1/4 cup toasted sesame seeds
- 1/4 cup unsweetened shredded coconut
- 1/2 tsp ground cardamom
Instructions
- Heat a large skillet over medium heat. Add the butter and let it melt, tilting the pan to coat the bottom. Add the chopped Medjool dates and stir continuously with a spatula. Cook for about 3 minutes, mashing the dates with the spatula as they soften. The dates will turn glossy and form a thick, fragrant paste. Remove from heat and let cool slightly for a minute.
- Stir the roasted pistachios, walnuts, and ground cardamom into the warm date paste. Fold with a spatula until the nuts are evenly distributed throughout the mixture. The paste will be thick and chunky. Let the mixture cool for 5 minutes so it is easier to handle.
- Transfer the date-nut mixture onto a large piece of parchment paper. Using your hands, shape it into a tight cylindrical log, about 2 inches in diameter. Press firmly to eliminate air pockets. Roll the log in the parchment to smooth the surface, then twist the ends to seal. Refrigerate for at least 30 minutes until firm.
- On a plate, combine the toasted sesame seeds and shredded coconut. Unwrap the chilled log and roll it in the seed-coconut mixture, pressing gently so the coating adheres evenly. Use your hands to pat the coating onto any bare spots. The log should be fully crusted.
- Place the coated log on a cutting board. Using a sharp chef's knife, slice into thick medallions, about 1/2-inch thick. Wipe the knife between cuts for clean edges. Arrange the slices on a serving platter, cut side up, to reveal the mosaic of nuts. Serve immediately.
