Before you start

Before starting, chop the dates into small, even pieces so they soften evenly. Measure out the nuts and chop them if they are not already in small pieces.

Toast the sesame seeds in a dry skillet for 2 to 3 minutes until golden and fragrant, then let cool. Line a baking sheet with parchment paper for shaping the log. Have all ingredients ready at the stove since the date mixture cooks quickly.

Ingredients at a glance (7)
  • 2 tbsp unsalted butter
  • 3 cups chopped pitted Medjool dates
  • 1/2 cup roasted pistachios, roughly chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup toasted sesame seeds
  • 1/4 cup unsweetened shredded coconut
  • 1/2 tsp ground cardamom

Instructions

Warm and Combine

  1. Warm the Dates
Heat a large skillet over medium heat. Add the butter and let it melt, tilting the pan to coat the bottom. Add the chopped Medjool dates and stir continuously with a spatula. Cook for about 3 minutes, mashing the dates with the spatula as they soften. The dates will turn glossy and form a thick, fragrant paste. Remove from heat and let cool slightly for a minute.
Look for The dates become soft and sticky, forming a smooth paste that pulls away from the pan slightly.
Tip Keep stirring to prevent sticking. If the dates seem dry, add a teaspoon of water at a time.
  2. Add Nuts and Spices
Stir the roasted pistachios, walnuts, and ground cardamom into the warm date paste. Fold with a spatula until the nuts are evenly distributed throughout the mixture. The paste will be thick and chunky. Let the mixture cool for 5 minutes so it is easier to handle.
Look for The mixture holds together when pressed, with nuts visible throughout the sticky date base.
Tip Chop the nuts into uniform pieces for even distribution and a cleaner slice.

The butter melts and the dates soften into a glossy, sticky paste. The aroma is intensely sweet and caramel-like.

The nuts and cardamom are folded in, creating a chunky, fragrant mixture that holds together when pressed. The paste should be warm but not boiling, and the nuts should be evenly distributed without clumping.

Shape and Coat

  1. Shape the Log
Transfer the date-nut mixture onto a large piece of parchment paper. Using your hands, shape it into a tight cylindrical log, about 2 inches in diameter. Press firmly to eliminate air pockets. Roll the log in the parchment to smooth the surface, then twist the ends to seal. Refrigerate for at least 30 minutes until firm.
Look for The log is compact, holds its shape, and feels firm after chilling.
Tip Wet your hands slightly to prevent sticking while shaping.
  2. Coat the Outside
On a plate, combine the toasted sesame seeds and shredded coconut. Unwrap the chilled log and roll it in the seed-coconut mixture, pressing gently so the coating adheres evenly. Use your hands to pat the coating onto any bare spots. The log should be fully crusted.
Look for The log is uniformly covered with a textured white and brown coating.
Tip Toast the sesame seeds in a dry skillet for a deeper flavor before mixing with coconut.

The mixture is shaped into a tight, even cylinder on parchment paper. After chilling, the log is firm to the touch and holds its shape. The sesame-coconut coating adheres evenly, covering the entire surface with a textured white and brown crust. The log feels solid and ready for slicing.

Slice and Present

  1. Slice and Serve
Place the coated log on a cutting board. Using a sharp chef's knife, slice into thick medallions, about 1/2-inch thick. Wipe the knife between cuts for clean edges. Arrange the slices on a serving platter, cut side up, to reveal the mosaic of nuts. Serve immediately.
Look for Each slice shows a beautiful cross-section of emerald pistachios and walnuts in dark amber date paste.
Tip For cleanest slices, chill the log for an additional 15 minutes after coating.

The knife glides through the chilled log, revealing clean, round medallions with a beautiful mosaic of emerald pistachios and walnuts set in dark amber date paste. The slices are uniform and hold together. The outer coating provides a crunchy contrast to the chewy interior.

Common mistakes

One common mistake is overcooking the dates, which makes them too dry and hard. Keep the heat at medium and stir constantly, removing from heat as soon as they become soft.

Another issue is not chilling the log long enough; if it is too soft, it will squish when you slice it. Also, be sure to press the mixture firmly when shaping to avoid air pockets that cause slices to fall apart.

How to tell it’s done

The date mixture is ready when the dates have broken down into a thick, glossy paste that holds together when pressed. The nuts should be evenly distributed, and the mixture should be warm but not hot.

After chilling, the log should be firm enough to slice cleanly without crumbling. When you slice, the medallions should hold their shape with a visible mosaic of nuts. If the slices crumble, the log needs more chilling.
