Tips for success
To achieve an even crispier bacon crust, place the meatloaf on an oven-safe wire rack set inside your rimmed baking sheet.
This allows heated air to circulate fully underneath the loaf, ensuring that the lower bacon edges become crisp while rendering excess drippings away cleanly.
If you prefer a caramelized glaze, brush the exterior of the crisp bacon with a light coating of barbecue sauce or ketchup during the final 10 minutes of baking. This creates a sweet and tangy finish that balances the rich mozzarella and smoky bacon flavors.
Variations
- Barbecue Glazed Loaf: Brush the crisp bacon wrapping with your favorite barbecue sauce during the last ten minutes of baking for a smoky, sweet, and sticky crust.
- Smoked Mozzarella Variation: Swap regular mozzarella cheese for smoked mozzarella sticks in the center to intensify the smoky profile provided by the outer bacon layer.
Storage and make-ahead
- Fridge
- Keep refrigerated in an airtight container for up to 3 days.
- Freezer
- Freeze wrapped in foil and sealed in a freezer bag for up to 2 months.
- Reheat
- Reheat thick slices in an oven preheated to 350°F (175°C) until warm.
Store leftover meatloaf in an airtight container to preserve moisture. Allow the meatloaf to cool at room temperature for no more than 2 hours before placing it into the refrigerator.
Slicing leftovers prior to storage makes it easy to portion and reheat individual servings later on.
You can shape and wrap the meatloaf in bacon up to 24 hours in advance. Keep the loaf tightly covered in plastic wrap in the refrigerator until ready to bake.
If baking directly from the refrigerator, add about 5 to 10 minutes to the total baking time to reach the required internal temperature.
Serving ideas
Serve the meatloaf sliced thick to highlight the gooey melted mozzarella core in every portion.
It pairs wonderfully with classic comfort sides like creamy mashed potatoes, steamed green beans, or roasted root vegetables, which absorb the savory drippings and complement the hearty flavors.
Consider pairing the slices with a rich brown gravy or a tangy tomato-based reduction on the side. The acidity of a tomato sauce cuts through the salty bacon and rich cheese, creating a well-rounded and deeply satisfying dinner plate for any casual family feast.

Mozzarella Stuffed Bacon-Wrapped Meatloaf

Ingredients
- 2 lb meatloaf mixture (store-bought or made ahead)
- 8 oz mozzarella cheese, cut into thick sticks or slices
- 10 slices bacon
Instructions
- Take the prepared meatloaf mixture out of the refrigerator and divide it into two equal portions. Firmly press one half into the base of a lined loaf pan to form a sturdy, even bottom layer with a slight hollow running lengthwise down the middle.
- Arrange the mozzarella cheese sticks end-to-end inside the hollowed center of the bottom layer. Press the remaining meatloaf mixture firmly over the top, carefully pinching and smoothing all outer edges so the cheese remains completely sealed inside the meat.
- Invert the shaped loaf onto a baking sheet, arrange the bacon slices snugly over the top and sides, and bake at 375°F (190°C) until the meatloaf mixture registers 160°F (71°C) internally and the bacon turns golden brown and crisp.
