Before you start

Before beginning, ensure the oven is preheated to 375°F (190°C) and prepare a rimmed baking sheet with parchment paper to catch rendering drippings.

Keep the meatloaf mixture and the mozzarella cheese chilled in the refrigerator until ready to handle. Have your bacon slices separated and laid flat on a plate so they wrap easily around the formed loaf without tearing or tangling.

Ingredients at a glance (3)
  • 2 lb meatloaf mixture (store-bought or made ahead)
  • 8 oz mozzarella cheese, cut into thick sticks or slices
  • 10 slices bacon

Instructions

Base Shaping

  1. Shape the Meatloaf Base
Take the prepared meatloaf mixture out of the refrigerator and divide it into two equal portions. Firmly press one half into the base of a lined loaf pan to form a sturdy, even bottom layer with a slight hollow running lengthwise down the middle.
Look for The base layer should be compact and have a distinct lengthwise indention.
Tip Keep the mixture cold so it holds its shape cleanly during assembly.

The base should look uniform and firm, pressed flat along the bottom of the pan with a clear indentation in the center.

The meat must be chilled and workable so it can support the cheese without slumping or cracking before the top half is added.

Stuffing and Sealing

  1. Add the Mozzarella Filling
Arrange the mozzarella cheese sticks end-to-end inside the hollowed center of the bottom layer. Press the remaining meatloaf mixture firmly over the top, carefully pinching and smoothing all outer edges so the cheese remains completely sealed inside the meat.
Look for Ensure the cheese is fully enclosed by the meat with no visible gaps or thin spots.
Tip Sealing every edge securely prevents the cheese from melting and leaking out while baking.

Check that the mozzarella is arranged in an even line down the center. The top layer of meatloaf mixture must completely cover the cheese, with all perimeter edges pinched tightly together so no white cheese is visible through the surface.

Bacon Wrapping and Baking

  1. Wrap in Bacon and Bake
Invert the shaped loaf onto a baking sheet, arrange the bacon slices snugly over the top and sides, and bake at 375°F (190°C) until the meatloaf mixture registers 160°F (71°C) internally and the bacon turns golden brown and crisp.
Look for The bacon should look deeply browned and crisp around the firm meatloaf.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Rest the baked meatloaf for at least 10 minutes before slicing to keep the juices contained.

The bacon should be arranged in neat, slightly overlapping layers covering the entire loaf. When the baking timer elapses, verify that the bacon is rendered and crispy while the meatloaf reaches an internal temperature of 160°F (71°C).

Common mistakes

A common mistake is failing to seal the cheese completely inside the meatloaf mixture; ensure all seams are tightly closed to prevent the mozzarella from leaking out onto the pan during the cooking process.

Another error is slicing immediately without resting, which causes the melted cheese to run out excessively rather than maintaining its luscious cheese pull.

How to tell it’s done

The meatloaf is finished cooking when the internal temperature reaches 160°F (71°C) when measured with an instant-read meat thermometer inserted into the thickest part of the meat without hitting the liquid cheese pocket.

The bacon should appear deeply browned and crisp on the surface. Allow the loaf to rest for at least 10 minutes after removal from the oven.

  • Ground meat: 160°F (71°C) in the thickest part
