Tips for success
For the most dramatic lava effect, serve the cakes immediately after baking. The longer they sit, the more the chocolate sets.
If you want to prepare ahead, you can assemble the ramekins and refrigerate them for up to 24 hours before baking – just add a couple of minutes to the baking time. But note that the cores should be frozen before assembling, so plan accordingly.
To get clean, even portions, use a cookie scoop to divide the batter. And when you invert the cakes, place a plate over the ramekin and flip quickly but confidently – this helps the cake release without breaking.
If the cake sticks, run a thin knife around the edge before inverting. Dust with powdered sugar just before serving for a beautiful finish.
Variations
- Hazelnut Praline: Swap the pistachio cream for hazelnut spread and the kataifi for crushed praline-filled wafer cookies. The result is a chocolate-hazelnut lava cake with a crunchy, nutty center.
- Berry Swirl: Add a spoonful of raspberry jam to the center of each cake instead of the pistachio core. The tart berries cut through the rich chocolate beautifully.
- Salted Caramel: Freeze a spoonful of salted caramel sauce in the center instead of the pistachio mixture. The caramel will flow out with the chocolate, adding a sweet-salty contrast.
- Mint Chocolate: Fold a few drops of peppermint extract into the batter and use a mint-chocolate filling (like a frozen mint truffle). The cool mint flavor pairs perfectly with dark chocolate.
Storage and make-ahead
- Fridge
- Store baked lava cakes in an airtight container in the refrigerator for up to 2 days. Reheat gently before serving.
- Freezer
- Freeze unbaked assembled ramekins for up to 1 month. Thaw overnight in the fridge before baking, or bake directly from frozen, adding 3-4 minutes.
- Reheat
- Reheat baked lava cakes in a 350°F (175°C) oven for 5-7 minutes, or microwave for 15-20 seconds. The center may not be molten after reheating.
Store leftover baked lava cakes (if any) in an airtight container in the refrigerator for up to 2 days.
To reheat, microwave for 15-20 seconds or warm in a 350°F (175°C) oven for 5 minutes – the center may not be as molten, but it will still be delicious. Unbaked assembled ramekins can be refrigerated for up to 24 hours before baking.
You can prepare the pistachio kataifi cores up to 3 days ahead and keep them frozen. Assemble the ramekins with the batter and cores, then cover and refrigerate for up to 24 hours before baking. When ready to serve, bake as directed, adding 2-3 minutes to the baking time if the ramekins are cold from the fridge.
Serving ideas
Serve the lava cakes warm, straight from the oven, for the best texture contrast. A dusting of powdered sugar is all you need – it adds a touch of sweetness and looks beautiful against the dark chocolate.
For an extra special presentation, you could add a small scoop of vanilla ice cream or a dollop of whipped cream, but the video keeps it simple with just the sugar.
These cakes are perfect for a dinner party because they can be assembled ahead and baked while guests are at the table. The dramatic reveal – cutting into the cake and watching the chocolate lava flow – is a moment that never fails to impress. Serve them on individual plates with a spoon, and encourage everyone to dig in immediately.

Dubai Chocolate Lava Cakes with Pistachio Kataifi

Ingredients
- 1/2 cup kataifi pastry, thawed
- 1/4 cup pistachio cream (or pistachio butter)
- 1 tbsp unsalted butter, melted
- 4 oz dark chocolate (60-70%), chopped
- 1/2 cup unsalted butter, plus more for greasing
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/4 tsp salt
- Powdered sugar, for dusting, to taste
Instructions
- Preheat the oven to 425°F (220°C). In a small skillet over medium heat, toast the kataifi pastry with the melted butter, stirring constantly, until golden and crisp, about 3-4 minutes. Remove from heat and let cool slightly. Stir the pistachio cream into the kataifi until well combined. Scoop the mixture into 4 equal portions and roll each into a tight ball. Place the balls on a small plate and freeze for at least 15 minutes, until firm.
- In a medium microwave-safe bowl, melt the dark chocolate and 1/2 cup butter together in 30-second bursts, stirring between each, until smooth. Let cool slightly. Whisk in the eggs one at a time, then add the flour and salt, and whisk until just combined. The batter will be thick and glossy.
- Grease four 6-ounce ramekins with butter. Divide half of the chocolate batter among the ramekins. Place one frozen pistachio kataifi ball in the center of each ramekin, then top with the remaining batter, covering the core completely. Place the ramekins on a baking sheet and bake at 425°F (220°C) for exactly 12 minutes, until the edges are set and the tops are just firm to the touch.
- Let the cakes cool in the ramekins for 1 minute. Run a knife around the edge of each ramekin and invert onto serving plates. Dust generously with powdered sugar. Serve immediately while warm, so the chocolate lava flows and the kataifi stays crisp.
