Tips for success
For the most intense lemon flavor, choose a ripe, fragrant lemon and blend it thoroughly until completely smooth. If your blender struggles, add a splash of the milk to help it puree.
The batter should be pale yellow and creamy, with no visible pieces of peel. This ensures the pith is finely ground, contributing to the cake's moist texture without any bitter chunks.
To achieve a perfectly even glaze, pour it over the center of the cake and let it flow naturally. Use a spoon to nudge it toward the edges if needed.
The glaze will set within minutes, creating a beautiful, crackly top. For a thicker glaze, let it sit for a couple of minutes before pouring; for a thinner one, add a few drops of lemon juice.
Variations
- Lemon-Poppy Seed: Add 2 tablespoons of poppy seeds to the dry ingredients for a delicate crunch. The seeds complement the lemon flavor and add visual appeal.
- Citrus Blend: Use half a lemon and half an orange, both whole and seeded, for a brighter, more complex citrus flavor. Adjust the glaze to use orange juice instead of lemon.
- Gluten-Free: Replace the all-purpose flour with a 1:1 gluten-free baking flour blend. Ensure the blend contains xanthan gum or add 1/2 teaspoon to the dry ingredients for structure.
- Herbed Lemon: Add 1 tablespoon of finely chopped fresh thyme or rosemary to the batter for an savory twist. This pairs wonderfully with the lemon and makes a great tea-time cake.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 5 days. Bring to room temperature before serving.
- Freezer
- Freeze the unglazed cake tightly wrapped in plastic and foil for up to 3 months. Thaw overnight in the fridge, then glaze and serve.
- Reheat
- Reheat slices in the microwave for 10-15 seconds or in a 300°F oven for 5 minutes until warm.
Store the cake in an airtight container at room temperature for up to 3 days. The glaze will stay shiny and the cake will remain moist. If the environment is very warm, you can refrigerate it, but bring to room temperature before serving for the best texture and flavor.
The cake can be baked a day ahead and kept, unglazed, in an airtight container. Glaze it just before serving for the freshest appearance. The glaze can also be made ahead and stored in the refrigerator in a small container; whisk briefly before using.
Serving ideas
Serve this cake as a dessert with a dollop of whipped cream or a scoop of vanilla ice cream. The tart glaze pairs beautifully with the rich, moist crumb.
For brunch, slice it thick and serve alongside fresh berries and a cup of coffee or tea. It also makes a lovely afternoon treat with a glass of cold milk.
For a special presentation, dust the top with a little extra powdered sugar or add a few thin lemon slices before serving.
The cake is equally delicious warm or at room temperature. If you like, you can warm individual slices in the microwave for 10 seconds to revive the fresh-baked aroma.

Moistest Whole-Lemon Cake with Tart Glaze

Ingredients
- 1 whole fresh lemon, washed and seeded
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 1/2 cups all-purpose flour
- 1 packet baking powder (about 2 teaspoons)
- 1 packet vanilla sugar (about 1 1/2 teaspoons)
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice
- 1 tbsp grated lemon zest
Instructions
- Cut the washed lemon into quarters and remove any seeds. Place the lemon quarters in a blender. Add the eggs, granulated sugar, vegetable oil, and milk. Blend on high for 2 minutes until the mixture is completely smooth and creamy, with no visible pieces of lemon peel. The puree will be aromatic and pale yellow.
- In a large mixing bowl, combine the all-purpose flour, baking powder, and vanilla sugar. Whisk until evenly distributed. Pour the lemon puree into the dry ingredients and whisk just until no streaks of flour remain. The batter should be glossy and fall from the whisk in a thick ribbon.
- Heat the oven to 340°F (170°C). Butter a 9x5-inch loaf pan and line it with parchment paper, leaving some overhang on the long sides for easy lifting. Pour the batter into the prepared pan and smooth the top with a spatula.
- Place the pan in the oven and bake for 45 minutes, until the top is domed and deep golden brown. A toothpick inserted into the center should come out clean or with only a few moist crumbs. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
- In a small bowl, whisk the powdered sugar with the fresh lemon juice until smooth and pourable. The glaze should be thick but flow slowly from the whisk. If it is too thick, add a few drops of lemon juice; if too thin, add more powdered sugar.
- While the cake is still warm (but not hot), drizzle the glaze evenly over the top, letting it cascade down the sides. Sprinkle the grated lemon zest over the glazed surface. Let the glaze set for a few minutes before slicing.
