This strawberry cream Swiss roll is a showstopper: a cloud-soft sponge, a silky white chocolate cream, and juicy fresh fruit all rolled into one elegant dessert.
The meringue-based batter gives the cake a light, airy crumb that rolls without cracking, while the creamy filling stays perfectly billowy. Finished with powdered sugar and cream rosettes, it looks like it came from a bakery but is simple enough to make at home.
Swiss rolls are a classic bakery treat, but this version takes it to the next level with a meringue-enriched sponge and a luxurious white chocolate pastry cream. The sponge is made by whipping egg whites and sugar to stiff peaks, then folding them into a yolk batter. This creates a light, flexible cake that rolls beautifully without breaking.
The filling is a silky pastry cream lightened with whipped cream, and it's studded with fresh strawberries and banana for a burst of fruity flavor. Dusted with powdered sugar and topped with cream rosettes, it's as pretty as it is delicious. Whether for a celebration or a weekend baking project, this roll is sure to impress.

Why this recipe works
The meringue method is the secret to this sponge's success. By whipping the egg whites to stiff peaks and folding them into the batter, you incorporate a huge amount of air.
This gives the cake a light, springy texture that can be rolled without cracking. The sugar in the meringue also stabilizes the foam, so the sponge holds its structure even when spread thin and baked quickly.
The filling is a two-step process that yields a cream that is both rich and airy. A classic pastry cream is thickened with flour and cornstarch, then enriched with white chocolate and butter.
Once cooled, it's folded with softly whipped cream, which lightens the texture and makes it billowy and smooth. This combination spreads easily and holds its shape when the roll is sliced.
Notes and substitutions
Use large eggs at room temperature for the best volume. Separate the eggs carefully, making sure no yolk gets into the whites, as any fat will prevent the whites from whipping properly. The sponge batter should be spread evenly in the pan so it bakes uniformly. A half-sheet pan (18x13 inches) is ideal for a thin cake that rolls easily.
For the pastry cream, whole milk gives the richest flavor, but 2% works too. Use good-quality white chocolate, as it is the dominant flavor. Chantilly powder is a stabilizer for whipped cream; if you don't have it, use vanilla sugar or a bit of vanilla extract. The cream should be thoroughly chilled before folding in the whipped cream, so it doesn't deflate.
- Chantilly powder: 1 tablespoon vanilla sugar or 1 teaspoon vanilla extract mixed with the whipped cream
- White chocolate: Milk chocolate or semi-sweet chocolate for a different flavor
- Strawberries: Raspberries or sliced peaches
- Banana: Mango or kiwi
