Tips for success
Weigh the pasta rather than measuring by volume if possible — 12 oz by weight is what the sauce is balanced for, and a heavy-handed cup measure can add enough extra noodles to dry the casserole.
When shredding the chicken, work with the grain into long, chunky strands instead of scraping it into fine bits; those larger pieces stay visible and give each bite real texture against the creamy sauce.
Save the reserved pasta water even if the sauce looks fine at first — after the casserole sits, it can be loosened with a splash before reheating.
For a browner top without overbaking the center, let the dish rest 5 minutes, then run it under the broiler for 60 to 90 seconds while standing at the oven door. And always salt the pasta water generously; it is the only chance the noodles get seasoned from within.
Variations
- Slow cooker chicken: Cook the chicken in a slow cooker with the butter, ranch seasoning and pepperoncini on low for 4 hours, shred it, then finish the casserole in the oven as written using the cooking liquid in place of part of the broth.
- Spicy version: Double the pepperoncini, add 2 tbsp of their brine to the sauce and swap half the cheddar for pepper jack. A pinch of cayenne in the chicken seasoning pushes the heat further without changing the method.
- Vegetable add-in: Fold 1 cup of thawed frozen peas or steamed chopped broccoli into the pasta mixture before assembling. Add them at the sauce stage so they heat through during the bake without turning mushy.
- Crunchy top: Mix 1/2 cup of crushed buttery crackers with 1 tbsp melted butter and scatter over the cheese before baking for a golden, crisp crust that contrasts with the creamy interior.
Storage and make-ahead
- Fridge
- Cover and refrigerate within 2 hours of baking; keeps 3 to 4 days. The sauce firms up when chilled — that is expected, not a flaw.
- Freezer
- Freeze the baked casserole, tightly wrapped, up to 2 months. Thaw overnight in the refrigerator before reheating so the center heats evenly.
- Reheat
- Reheat covered in a 350°F (175°C) oven for 20 to 25 minutes, or microwave single portions with a splash of broth to loosen the sauce.
Cool leftovers no more than 2 hours at room temperature, then cover the dish or transfer portions to airtight containers. Refrigerated, the casserole keeps its texture well for 3 to 4 days; the sauce thickens as it chills, which is normal.
Reheat individual portions in the microwave or the whole dish covered in a 350°F (175°C) oven until steaming in the center.
The whole casserole can be assembled up to 24 hours ahead. Build it through the cheese layer in the baking dish, cover tightly with foil, and refrigerate.
Bake straight from the refrigerator, adding 10 to 12 minutes to the bake time and keeping the foil on for the first half so the top does not brown before the center heats through. The chicken can also be cooked and shredded 2 days ahead.
Serving ideas
Serve the casserole straight from the baking dish while the cheese still stretches — a wide spatula makes clean squares, and a shallow bowl catches any sauce that slips. The flavors are rich and tangy, so simple sides are the right match: a crisp green salad with a sharp vinaigrette, steamed green beans, or quick roasted broccoli to cut through the cream.
For a fuller Southern-style spread, add warm cornbread or crusty bread alongside, and set out extra sliced pepperoncini and their brine at the table for anyone who wants more tang and a little heat. Leftover portions reheat beautifully and make a hearty next-day lunch straight from a container, no extra sauce needed.

Mississippi Chicken Casserole with Cheesy Pasta in One Dish

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 1 tsp kosher salt, plus more for the pasta water
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tbsp olive oil
- 12 oz elbow pasta
- 1/4 cup unsalted butter, cut into pieces
- 1 tbsp ranch seasoning
- 1/3 cup sliced pepperoncini peppers
- 2 tbsp pepperoncini brine
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup chicken broth
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
Instructions
- Pat the chicken breasts dry with paper towels, then season both sides with the kosher salt, black pepper and smoked paprika. Let them sit at the counter for no more than 30 minutes while the oven heats, or season them right before cooking and keep them refrigerated until the pan is ready.
- Heat the oven to 400°F (200°C). Warm the olive oil in a large skillet over medium-high heat and sear the chicken 2 to 3 minutes per side until deeply golden. Transfer the skillet to the oven and bake 15 to 20 minutes, until the thickest piece registers 165°F (74°C) on an instant-read thermometer.
- Move the chicken to a cutting board and let it rest 5 minutes so the juices settle. Shred it with two forks into bite-size pieces — chunky shreds hold their texture better than fine ones. Taste a shred and add a pinch of salt only if it needs it.
- Bring a large pot of well-salted water to a rolling boil and cook the elbow pasta 1 minute short of the package time. It should be tender with a firm center, because it finishes in the oven. Reserve 1/2 cup of the pasta water, then drain the pasta and set it aside.
- In the same skillet over medium heat, melt the butter, then stir in the ranch seasoning, pepperoncini, brine, chicken broth, cream cheese and sour cream. Whisk until the cream cheese melts completely and the sauce is smooth and glossy, 3 to 4 minutes. Loosen with the reserved pasta water if it thickens too much.
- Stir the shredded chicken and 1 cup of the cheddar into the sauce until every shred is coated and the cheese has melted in. The mixture should be thick and creamy, hugging the spoon. Remove the skillet from the heat so the cheese does not tighten.
- Fold the drained pasta into the chicken mixture until it is evenly coated, then scrape everything into the glass baking dish and level the surface with a spatula. Scatter the remaining cheddar and all of the mozzarella evenly over the top, edge to edge.
- Bake at 400°F (200°C) for 18 to 22 minutes, until the edges bubble actively and the cheese on top is melted with golden spots. If the top colors too quickly, lay a piece of foil loosely over the dish for the last few minutes.
- Let the casserole stand 5 minutes before scooping — the sauce thickens to a spoonable consistency and the portions hold together. Scoop with a spatula onto plates and serve hot, while the cheese still stretches with each bite.
