Tips for success
For the best marble effect, use a knife or skewer to make a few figure-eight motions through the batter—no more than five or six strokes. Over-swirling will blend the colors into a single brown, losing the dramatic contrast. If you want a more pronounced swirl, use larger dollops of each batter and swirl only once or twice. The key is to be gentle and deliberate.
To keep the cake moist, avoid overbaking. Start checking at 50 minutes and rely on the toothpick test rather than the clock. If the top is browning too quickly, cover loosely with foil.
After baking, let the cake cool completely before slicing—this allows the crumb to set and makes cleaner cuts. For the neatest slices, use a serrated knife and wipe it between cuts.
Variations
- Chocolate-Hazelnut Swirl: Add 1/4 cup chocolate-hazelnut spread to the chocolate batter for an extra layer of flavor. Swirl as directed; the spread adds richness and a glossy sheen to the cocoa ribbons.
- Citrus Marble: Replace the milk with buttermilk and add 1 tablespoon orange zest to the vanilla batter. The bright citrus cuts through the chocolate and pairs well with the nuts.
- Nut-Free Version: Omit the hazelnuts or replace with toasted sunflower seeds or shredded coconut for a nut-free crunch. The cake remains delicious and safe for those with tree nut allergies.
- Coffee-Chocolate Twist: Dissolve 1 teaspoon instant espresso powder in 1 tablespoon hot water and add to the chocolate batter. The coffee enhances the cocoa flavor and adds depth.

- Freezer
- Wrap tightly in plastic wrap and foil; freeze for up to 2 months. Thaw overnight in the fridge before bringing to room temperature.

Store the marble loaf cake in an airtight container at room temperature for up to 3 days. To keep it moist, place a piece of parchment paper against the cut side.
The hazelnut topping may soften slightly over time but will remain crunchy for the first day. For longer storage, refrigerate for up to a week, but bring to room temperature before serving to restore the tender crumb.
The cake can be baked a day ahead and stored in an airtight container. It actually tastes better the next day as the flavors meld.
You can also prepare the batter up to a day in advance and refrigerate it, but bring it to room temperature and gently stir before baking. The baked cake freezes well for up to 2 months; wrap tightly in plastic wrap and foil before freezing.
Serving ideas
Serve this marble loaf cake as a delightful dessert or an afternoon treat. It pairs beautifully with a cup of coffee or tea, and a dollop of whipped cream or a scoop of vanilla ice cream elevates it to a special dessert.
For a simple presentation, dust with confectioners' sugar just before serving, or drizzle with a simple glaze made from powdered sugar and milk.
The cake is also wonderful toasted lightly and spread with butter or jam for breakfast. The hazelnut topping adds a sophisticated touch that makes it suitable for brunch tables and celebrations. Slice thickly and arrange on a platter for a crowd, or wrap individual slices for lunchboxes. However you serve it, the marble swirl is sure to impress.

Marble Swirl Loaf Cake with Hazelnuts

Ingredients
- 3 large eggs
- 1 1/2 cups granulated sugar
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsweetened cocoa powder
- 1/2 cup chopped roasted hazelnuts
Instructions
- Heat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper. In a large bowl, beat the eggs and sugar with an electric mixer on medium-high speed until pale, thick, and ribbon-like, about 3 to 4 minutes. Add the milk and oil, then beat on low until combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low just until no streaks of flour remain.
- Pour half of the batter (about 2 cups) into a separate bowl. Sift the cocoa powder over one portion and gently fold it in with a spatula until fully incorporated and no dry streaks remain. The other half remains plain vanilla. Both batters should be smooth and similar in consistency.
- Spoon alternating dollops of vanilla and chocolate batter into the prepared loaf pan, creating a checkerboard pattern. Use a knife or skewer to gently swirl through the batters in a figure-eight motion to create a marble effect. Do not over-swirl or the colors will blend into one muddy brown. Smooth the top with a spatula.
- Sprinkle the chopped roasted hazelnuts evenly over the top of the batter. Press them lightly into the surface so they adhere during baking. The nuts will toast further in the oven, adding a crunchy contrast to the soft crumb.
- Place the pan in the preheated oven and bake for 50 to 60 minutes, until the top is golden brown and a toothpick inserted into the center comes out with only a few moist crumbs. The internal temperature of the cake should reach 200°F (93°C) in the center. If the top browns too quickly, cover loosely with foil after 30 minutes.
- Remove the pan from the oven and place on a wire rack. Let the cake cool in the pan for 10 minutes. Then run a knife around the edges and carefully lift the cake out using the parchment paper. Transfer to the wire rack and cool completely before slicing.
- Once completely cool, use a serrated knife to slice the loaf into thick pieces. Each slice reveals the beautiful marble swirl and the crunchy hazelnut crust. Serve as is or with a dusting of confectioners' sugar, if desired.
