Tips for success
For the best flavor, use real butter rather than margarine, and don't skimp on the Creole seasoning. If you like a spicier dish, add a pinch of cayenne pepper along with the Creole seasoning.
When stirring the slow cooker, use a gentle hand to avoid breaking the pasta strands. If you prefer a thinner sauce, add more seafood stock at the end. For a thicker, more decadent sauce, stir in an extra 2 tablespoons of cream cheese during the last 30 minutes of cooking.
This recipe is forgiving and adaptable. If you're short on time, you can cook the pasta separately on the stovetop and stir it into the sauce just before serving.
The crawfish can be replaced with shrimp or even leftover cooked chicken. To make it ahead, prepare the sauce and cook the pasta separately, then combine and reheat gently. The dish freezes well, though the pasta may soften upon reheating.
Variations
- Shrimp Etouffee Fettuccine: Substitute 1 pound of peeled and deveined large shrimp for the crawfish tails. Add the shrimp during the last 30 minutes of cooking to prevent them from becoming rubbery. The shrimp will cook quickly and absorb the flavors of the sauce.
- Spicy Andouille Sausage Version: Add 8 ounces of sliced andouille sausage along with the vegetables in the first phase. The sausage will infuse the sauce with smoky, spicy flavor. Reduce the Creole seasoning to 1 tablespoon if the sausage is very spicy. This version is heartier and perfect for meat lovers.
- Vegetarian Creole Pasta: Omit the crawfish and use vegetable stock instead of seafood stock. Add 1 cup of sliced mushrooms and 1 cup of diced zucchini along with the vegetables in the first phase. Increase the vegetables to add bulk and texture. The sauce remains rich and creamy, with the Creole spices providing a deep, savory flavor.
- Creamy Cajun Chicken Pasta: Replace the crawfish with 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces. Cook the chicken in a skillet until browned, then add to the slow cooker with the cream and pasta. Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving. The chicken adds protein and makes the dish more filling.

Reheat gently on the stovetop or in the microwave, stirring frequently to prevent sticking.
The sauce base can be prepared up to 2 days ahead and stored in the refrigerator. When ready to serve, reheat the sauce in the slow cooker on LOW, then add the crawfish, cream, fettuccine, and Parmesan.
The pasta can also be cooked ahead and tossed with a little oil to prevent sticking, then added in the last hour of cooking.
Serving ideas
Serve the crawfish etouffee fettuccine in deep bowls, with a generous sprinkle of sliced green onions and a lemon wedge on the side. The bright citrus and fresh onion balance the rich, creamy sauce. A side of crusty French bread or garlic bread is perfect for soaking up every bit of the sauce.
For a more complete meal, add a simple green salad with a tangy vinaigrette. This dish is hearty enough to stand alone, but it also pairs well with steamed rice if you want to stretch it further. The flavors are bold and comforting, making it a crowd-pleaser for any dinner party or family meal.

Crockpot Crawfish Etouffee Fettuccine: Rich Southern Comfort

Ingredients
- 1/2 cup unsalted butter
- 1 medium yellow onion, diced
- 2 stalks celery, diced
- 1 medium green bell pepper, diced
- 4 cloves garlic, minced
- 2 tbsp Creole seasoning
- 2 cups seafood stock
- 8 oz cream cheese, softened
- 1 lb Louisiana crawfish tails
- 1 cup heavy cream
- 16 oz fettuccine pasta
- 1 cup grated Parmesan cheese
- 1/4 cup sliced green onions
- 1 medium lemon, cut into wedges
Instructions
- In a 6-quart slow cooker, add the melted butter, diced onion, celery, green bell pepper, minced garlic, Creole seasoning, seafood stock, and softened cream cheese. Stir until the cream cheese is mostly combined with the liquid. Set the slow cooker to LOW and cook the mixture for 2.5 hours, stirring occasionally, until the vegetables are tender and the sauce is smooth and velvety.
- After the base has cooked, add the crawfish tails, heavy cream, fettuccine, and grated Parmesan cheese to the slow cooker. Stir gently to combine everything. Continue cooking on LOW for another 2 hours, stirring occasionally, until the pasta is tender and has absorbed some of the sauce. The crawfish should be heated through and the sauce thickened.
- Once the pasta is cooked and the crawfish are heated through, turn off the slow cooker. Taste and adjust seasoning with additional Creole seasoning if desired. Serve the etouffee fettuccine in bowls, garnished with sliced green onions and lemon wedges on the side for squeezing over the top.
