Tips for success
For the crispiest crust, make sure the skillet is screaming hot before adding the batter. A good sizzle when you pour is essential.
Also, don't skip the honey brush—it not only adds sweetness but also helps create a beautiful, shiny top. If you want extra heat, leave some seeds in the jalapeños or add a pinch of cayenne to the dry ingredients.
To make ahead, prepare the batter and store it in the refrigerator for up to 24 hours. When ready to bake, preheat the skillet and pour in the cold batter—you may need to add a few minutes to the baking time.
Leftover cornbread can be reheated in a toaster oven or under the broiler for a few minutes to crisp up the edges. Serve with butter and additional honey if desired.
Variations
- Spicy Sausage Cornbread: Replace the bacon with 1/2 cup cooked, crumbled breakfast sausage and add an extra jalapeño for more heat. The sausage adds a savory, herby flavor that pairs well with the cheese.
- Cheddar and Herb Cornbread: Omit the bacon and jalapeños, and add 1 tablespoon of chopped fresh chives and 1 teaspoon of dried thyme to the batter. This variation is more subtle and pairs well with roasted meats.
- Sweet Cornbread with Honey: For a sweeter version, increase the sugar to 1/4 cup and reduce the cheddar to 1 cup. Omit the jalapeños and bacon, and add 1/2 cup of corn kernels. Brush with extra honey for a dessert-like treat.
- Loaded with Green Chiles: Swap the jalapeños for a 4-ounce can of diced green chiles, drained. This adds a milder, slightly smoky heat. Keep the bacon and cheddar for a classic Southwestern twist.

Loaded Cheesy Jalapeño Bacon Cornbread Skillet

Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1 tsp salt
- 2 large eggs, beaten
- 3/4 cup buttermilk
- 1/3 cup unsalted butter, melted
- 1 1/2 cups sharp cheddar cheese, shredded
- 6 slices cooked bacon, crumbled
- 2 fresh jalapeños, diced
- 2 tbsp honey
Instructions
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined. Make a well in the center.
- In a separate bowl, whisk the beaten eggs, buttermilk, and melted butter until smooth. Pour the wet mixture into the well of the dry ingredients.
- Stir until just combined, then gently fold in the shredded cheddar, crumbled bacon, and diced jalapeños. Do not overmix.
- Place a 10-inch cast-iron skillet in the oven and preheat to 400°F (200°C). Once hot, carefully remove the skillet and add a pat of butter, swirling to coat the bottom and sides.
- Pour the batter into the hot skillet. It should sizzle as it hits the buttered surface. Spread it evenly.
- Bake at 400°F (200°C) for 22 minutes, or until the top is golden brown, puffed, and a toothpick inserted into the center comes out clean. The internal temperature of the cornbread should reach 200°F (93°C) for a fully set crumb.
- Remove the skillet from the oven and immediately brush the hot cornbread with the honey. Let it soak in.
- Let the cornbread cool for 5 minutes, then slice into wedges and serve warm. Pull apart a piece to show the melted cheese and moist crumb.
