Tips for success
For the crispiest bacon, cook it slowly over medium heat, turning occasionally, until the fat is rendered and the pieces are deeply browned. Drain on paper towels to remove excess grease.
This ensures the bacon stays crisp even after being mixed into the casserole. If you prefer extra-crispy bacon, you can also bake it in the oven on a rack, which allows the fat to drip away.
To make the casserole even more flavorful, consider adding a pinch of smoked paprika or a dash of hot sauce to the sauce. You can also top the casserole with breadcrumbs mixed with melted butter for a crunchy topping.
For a more indulgent dish, sprinkle some extra cheese on top during the last five minutes of baking for an extra-gooey finish.
Variations
- Vegetarian Version: Omit the chicken and add an extra cup of diced vegetables like bell peppers and zucchini. Sauté them with the onions and garlic, and increase the potatoes to 5 large. Use vegetable broth instead of chicken broth. The rest of the recipe stays the same.
- Spicy Kick: Add 1-2 teaspoons of chopped jalapeño or a pinch of cayenne pepper to the sauce. You can also use pepper jack cheese instead of cheddar for an extra layer of heat. Top with sliced green onions for a fresh contrast.
- Broccoli Cheddar: Stir in 2 cups of steamed broccoli florets along with the potatoes and chicken. Reduce the potatoes to 3 large to keep the proportions balanced. The broccoli adds color and a nutritious boost without overpowering the dish.
- Loaded with Extras: Add 1/2 cup of sour cream to the sauce for extra tang, and mix in 1 cup of sautéed mushrooms. For a smoky twist, use smoked cheddar or add a teaspoon of smoked paprika. Garnish with extra bacon bits and chives.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, place a portion in the microwave or warm it in the oven at 350°F (175°C) until heated through. The casserole can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
This casserole can be assembled up to a day in advance. Prepare the filling and transfer it to the baking dish, but do not add the remaining cheese topping.
Cover and refrigerate. When ready to bake, sprinkle with the cheese and bake as directed, adding about 10 minutes to the baking time to account for the cold dish.
Serving ideas
Serve this loaded baked potato chicken casserole hot, straight from the oven, with a sprinkle of fresh chives on top. It pairs beautifully with a crisp green salad or steamed green beans to balance the richness. For a truly comforting meal, serve it with some crusty bread or dinner rolls to soak up the creamy sauce.
The casserole is hearty enough to be a complete meal on its own, but it also works well as a side dish for a larger spread.
If serving a crowd, consider offering a variety of toppings like sour cream, extra bacon, or sliced green onions so everyone can customize their plate. Leftovers taste just as good the next day, making it a great option for meal prep.

Loaded Baked Potato Chicken Casserole: Cheesy Comfort

Ingredients
- 4 large baking potatoes, scrubbed and cut into 1-inch chunks
- 2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 slices bacon, chopped
- 2 cups shredded sharp cheddar cheese, divided
- 1 cup heavy cream
- 1 cup chicken broth
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 3 tbsp all-purpose flour
- 2 tbsp unsalted butter
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp chopped fresh chives, for garnish
Instructions
- Place the potato chunks in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to a simmer and cook until just tender, about 10-12 minutes. Drain and set aside. Meanwhile, in a large skillet over medium heat, cook the chopped bacon until crisp, about 8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving about 2 tablespoons of drippings in the skillet.
- Add the butter to the skillet with the bacon drippings. Once melted, add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Sprinkle the flour over the onion mixture and stir to coat. Cook for 1-2 minutes to remove the raw flour taste. Slowly pour in the chicken broth and heavy cream, whisking constantly to avoid lumps. Bring to a simmer and cook until the sauce thickens, about 3-4 minutes. Season with salt and pepper.
- Add the chicken pieces to the sauce and stir to coat. Cook for 5-7 minutes, stirring occasionally, until the chicken is no longer pink on the outside. Remove from heat. Add the drained potatoes and half of the shredded cheddar, along with the cooked bacon, and stir to combine everything evenly.
- Preheat the oven to 350°F (175°C). Transfer the mixture to a 9x13-inch baking dish and spread it into an even layer. Sprinkle the remaining cheddar cheese over the top.
- Bake the casserole in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly and the chicken is cooked through. The internal temperature of the chicken should reach 165°F (74°C). Let the casserole rest for 5 minutes before serving.
- Sprinkle the chopped chives over the hot casserole and serve directly from the baking dish or scoop onto plates.
