Tips for success
For the crispiest crust, make sure the oil is hot enough before adding the chicken. A drop of panko should sizzle immediately when added. Use a thermometer to keep the oil around 350°F (175°C).
Also, let the breaded cutlets rest for 5 minutes before frying; this helps the coating adhere better. If cooking in batches, keep the finished cutlets warm on a wire rack in a low oven.
When toasting the buns, use a generous amount of garlic butter and press them down slightly to get even browning. The buns should be golden and crisp but still soft in the center.
For the slaw, toss the romaine with dressing just before assembling to avoid wilting. Add the parmesan in two stages: some in the slaw and some on top for visual appeal and extra flavor.
Variations
- Spicy Chipotle Caesar: Add 1 teaspoon chipotle powder to the marinade and mix 1 tablespoon hot sauce into the Caesar dressing. Top with sliced jalapeños for extra heat.
- Grilled Chicken Version: Skip the breading and grill the marinated chicken over medium-high heat for 4-5 minutes per side. Brush with garlic butter and serve on toasted buns with the same slaw.
- Parmesan Crusted: Mix 1/2 cup finely grated parmesan into the panko mixture for an extra savory, nutty crust. Reduce the salt in the marinade slightly to balance.
- Avocado Caesar: Add sliced avocado to the assembled sandwich for a creamy, rich addition. Mash a little avocado into the dressing for extra body.
Storage and make-ahead
- Fridge
- Store leftover cutlets and slaw separately in airtight containers in the refrigerator for up to 3 days. Reheat cutlets in the oven to keep them crisp.
- Freezer
- Breaded, uncooked cutlets can be frozen for up to 2 months. Freeze in a single layer on a baking sheet, then transfer to a zip-top bag.
- Reheat
- Reheat cooked cutlets in a 375°F (190°C) oven for 8-10 minutes until hot and crisp. Avoid microwaving, which makes the coating soggy.

The Caesar slaw is best eaten fresh but can be stored separately for up to 1 day. Assembled sandwiches are best enjoyed immediately to avoid soggy bread.
The chicken can be pounded, marinated, and breaded up to 1 day ahead. Keep the breaded cutlets on a plate covered with plastic wrap in the refrigerator.
The garlic butter can be made ahead and stored in the refrigerator for up to 1 week. The Caesar slaw can be prepped by shredding the romaine and storing it in a sealed bag with a paper towel; toss with dressing just before serving.
Serving ideas
Serve the sandwiches hot, with extra lemon herb Caesar dressing on the side for dipping. Pair with crispy fries, a simple green salad, or pickles to cut through the richness. The sandwich is substantial enough to be a main course on its own, but it also works well for a casual gathering or game-day spread.
For a prettier presentation, cut the sandwiches in half diagonally and secure with a toothpick. Serve on a wooden board with extra parmesan shavings and lemon wedges. The contrast of the golden brioche, green romaine, and white parmesan makes for an appetizing plate. Offer napkins — this sandwich is meant to be messy and delicious.

Lemon Herb Crispy Chicken Caesar Sandwich

Ingredients
- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper, freshly ground
- 2 cups panko breadcrumbs
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- 4 brioche buns, split
- 3 tbsp garlic butter, softened
- 2 cups romaine hearts, shredded
- 1/2 cup lemon herb Caesar dressing
- 1/2 cup parmesan cheese, shaved
Instructions
- Place each chicken breast between two sheets of plastic wrap and pound to an even 1/2-inch thickness. In a shallow dish, whisk together lemon zest, lemon juice, olive oil, garlic powder, dried oregano, salt, and black pepper. Add the chicken and turn to coat. Cover and refrigerate for at least 15 minutes or up to 2 hours.
- Place the flour in one shallow dish, the beaten eggs in a second, and the panko in a third. Season the panko with a pinch of salt and pepper. Working with one piece at a time, dredge the chicken in flour, shaking off excess, then dip into the eggs, letting any excess drip off, and finally press into the panko until evenly coated. Set the breaded cutlets on a plate.
- Heat a large skillet over medium-high heat and add enough oil to coat the bottom. When the oil shimmers, add the breaded chicken in a single layer, working in batches if needed. Cook until golden brown and crispy on the first side, about 3 to 4 minutes. Flip and cook until the second side is golden and the chicken registers 165°F (74°C) in the thickest part, about 3 to 4 minutes more. Transfer to a wire rack.
- Spread the cut sides of the brioche buns with garlic butter. Heat a clean skillet or griddle over medium heat. Place the buns cut-side down and toast until golden and fragrant, about 1 to 2 minutes. Remove and set aside.
- In a medium bowl, combine the shredded romaine hearts with the lemon herb Caesar dressing and half of the shaved parmesan. Toss until the lettuce is evenly coated.
- Place a crispy chicken cutlet on the bottom half of each toasted bun. Pile the Caesar slaw generously on top of the chicken. Sprinkle with the remaining shaved parmesan. Top with the other half of the bun and press down gently.
- Cut each sandwich in half if desired and serve immediately while the chicken is hot and crisp. The dressing should be creamy and the lettuce crunchy.
