Before you start

Before starting, gather all ingredients and set up a breading station with three shallow dishes for flour, eggs, and panko. Pound the chicken breasts to an even thickness and whisk the marinade.

Have a large skillet ready for frying and a clean skillet or griddle for toasting the buns. Shred the romaine and measure the dressing and parmesan. Make the garlic butter by mixing softened butter with minced garlic and a pinch of salt if not using store-bought.

Ingredients at a glance (16)
  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground
  • 2 cups panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 4 brioche buns, split
  • 3 tbsp garlic butter, softened
  • 2 cups romaine hearts, shredded
  • 1/2 cup lemon herb Caesar dressing
  • 1/2 cup parmesan cheese, shaved

Instructions

Prep and Marinate

  1. Pound and marinate the chicken
Place each chicken breast between two sheets of plastic wrap and pound to an even 1/2-inch thickness. In a shallow dish, whisk together lemon zest, lemon juice, olive oil, garlic powder, dried oregano, salt, and black pepper. Add the chicken and turn to coat. Cover and refrigerate for at least 15 minutes or up to 2 hours.
Look for Chicken is evenly thin and fully coated with the marinade.
Tip Pounding to an even thickness ensures quick, even cooking.
  2. Set up the breading station
Place the flour in one shallow dish, the beaten eggs in a second, and the panko in a third. Season the panko with a pinch of salt and pepper. Working with one piece at a time, dredge the chicken in flour, shaking off excess, then dip into the eggs, letting any excess drip off, and finally press into the panko until evenly coated. Set the breaded cutlets on a plate.
Look for Each cutlet is fully coated with a dry, even layer of panko.
Tip Press the panko gently so it adheres without clumping.

The chicken is pounded thin and coated in a fragrant lemon herb marinade. The breading station is ready with flour, eggs, and panko.

At this point, the kitchen smells bright and herbaceous. The chicken should be refrigerated while the oil heats, and the buns and slaw ingredients are prepped.

Cook and Toast

  1. Cook the cutlets
Heat a large skillet over medium-high heat and add enough oil to coat the bottom. When the oil shimmers, add the breaded chicken in a single layer, working in batches if needed. Cook until golden brown and crispy on the first side, about 3 to 4 minutes. Flip and cook until the second side is golden and the chicken registers 165°F (74°C) in the thickest part, about 3 to 4 minutes more. Transfer to a wire rack.
Look for The cutlets are golden brown, crisp, and sizzling.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid crowding the pan to keep the crust crunchy.
  2. Toast the brioche buns
Spread the cut sides of the brioche buns with garlic butter. Heat a clean skillet or griddle over medium heat. Place the buns cut-side down and toast until golden and fragrant, about 1 to 2 minutes. Remove and set aside.
Look for The buns are golden with crisp, buttery edges.
Tip Toast just until golden to keep the brioche soft inside.
  3. Toss the Caesar slaw
In a medium bowl, combine the shredded romaine hearts with the lemon herb Caesar dressing and half of the shaved parmesan. Toss until the lettuce is evenly coated.
Look for Romaine is lightly coated, not drenched.
Tip Add dressing gradually to avoid a soggy slaw.

The cutlets are golden brown and crispy, with an internal temperature of 165°F (74°C). The buns are toasted with garlic butter, golden and fragrant. The Caesar slaw is creamy and crunchy. The pan sizzles as the chicken cooks, and the aroma of garlic and lemon fills the kitchen.

Assemble and Serve

  1. Assemble the sandwiches
Place a crispy chicken cutlet on the bottom half of each toasted bun. Pile the Caesar slaw generously on top of the chicken. Sprinkle with the remaining shaved parmesan. Top with the other half of the bun and press down gently.
Look for Sandwiches are tall, colorful, and the dressing begins to ooze.
Tip Press gently so the filling stays put.
  2. Serve and enjoy
Cut each sandwich in half if desired and serve immediately while the chicken is hot and crisp. The dressing should be creamy and the lettuce crunchy.
Look for The cutlets are crisp, the buns are golden, and the dressing is creamy.
Tip Serve right away to enjoy the crunch.

The sandwiches are piled high with crispy chicken, creamy slaw, and shaved parmesan. The buns are warm and buttery. When pressed, the dressing oozes out slightly. The first bite produces a loud crunch. Serve immediately to enjoy the contrast of textures.

Common mistakes

One common mistake is overcrowding the skillet, which lowers the oil temperature and makes the crust soggy. Cook the cutlets in batches if necessary. Another is not pounding the chicken thin enough, leading to undercooked centers or overcooked exteriors.

Also, avoid over-marinating the chicken in lemon juice for more than 2 hours, as the acid can make the meat mushy. Finally, dress the slaw just before assembling to keep the lettuce crisp.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part, measured with an instant-read thermometer. The cutlets should be deep golden brown and crisp on both sides.

When you press on the chicken, it should feel firm but not hard. The buns are done when they are golden and fragrant, with crisp edges. The slaw should be well coated but not soggy.

  • Poultry: 165°F (74°C) in the thickest part
