Tips for success
For the best cheese pull, use a mix of mozzarella and cheddar. Mozzarella provides the stretch, while cheddar adds sharpness and color.
Grate the cheese from a block for superior melting. If using pre-shredded cheese, look for one without anti-caking agents, or toss it with a little cornstarch to improve melting.
To make slicing easier, use a sharp chef's knife and wipe it clean between cuts. Serve with a spatula to keep the layers intact.
If you have leftovers, reheat in a skillet or oven to revive the crispy edges—microwaving will make the tortillas soggy.
Variations
- Spicy Chorizo Version: Replace the ground beef with fresh chorizo, removing it from casings. Cook until browned and crumbly, and reduce the salt since chorizo is already seasoned. Add a diced jalapeño for extra heat.
- Vegetarian Black Bean: Swap the beef for two cans of drained black beans, sautéed with the same spices and vegetables. Add a cup of corn kernels for sweetness. The filling will be less greasy but still hearty.
- Chicken and Salsa: Use shredded rotisserie chicken mixed with 1/2 cup of salsa instead of ground beef. Omit the tomato paste and reduce the cumin. The chicken is already cooked, so just warm it through before layering.
- Breakfast Style: Skip the beef and layer scrambled eggs, cooked bacon, and cheddar between the tortillas. Bake as directed. A great brunch option with a side of hot sauce.

Layered Cheesy Beef Tortilla Casserole Pie

Ingredients
- 1 lb ground beef
- 1 yellow onion, diced
- 2 bell peppers, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 6 flour tortillas (8-inch)
- 2 cups shredded mozzarella
- 1 cup shredded cheddar
- 3 tbsp unsalted butter, melted
- 2 tbsp fresh parsley, chopped
- 1 clove garlic, minced (for butter)
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink, about 5-7 minutes. Add the diced onion, bell peppers, and minced garlic. Cook for 3-4 minutes until the vegetables soften. Stir in the tomato paste, cumin, smoked paprika, salt, and black pepper. Cook for 2 minutes until the mixture is thick and fragrant.
- Preheat the oven to 380°F (193°C). Lightly grease a 10-inch cast iron skillet or oven-safe pan. Overlap the flour tortillas around the base and up the sides of the pan, allowing the edges to hang over. The tortillas should cover the bottom completely.
- Spread half of the seasoned beef mixture evenly over the tortillas. Sprinkle with 1 cup of shredded mozzarella. Top with the remaining beef mixture and another cup of mozzarella. Fold the overhanging tortilla edges inward over the filling, creating a layered pie.
- In a small bowl, mix the melted butter with the minced garlic and chopped parsley. Brush the mixture over the top of the pie. Sprinkle the shredded cheddar evenly over the surface.
- Place the skillet in the preheated oven and bake for 20 minutes, until the cheese is melted and bubbling and the top is golden brown. The internal temperature of the beef should reach 160°F (71°C).
- Remove the skillet from the oven and let the pie rest for 5 minutes. Slice into wedges and serve warm, pulling out a slice to show the cheese stretch.
