Tips for success
For the best char, make sure your skillet is really hot before adding the chicken. A cast-iron skillet works beautifully. Do not move the chicken too soon; let it develop a crust.
If the chicken sticks, it is not ready to flip. Use tongs to flip gently. After cooking, let the chicken rest for a few minutes so the juices redistribute. Slice against the grain for tenderness.
When assembling, place the filling in the center and do not overstuff. Fold the sides in first, then roll from the bottom, tucking as you go. Toasting the wrap seam-side down first helps seal it.
Press gently with a spatula to get even browning. For extra crispness, toast on all sides. Serve immediately while the wrap is warm and crunchy.
Variations
- Grilled Chicken Wrap: Instead of searing in a skillet, grill the marinated chicken over medium-high heat for 5-6 minutes per side until charred and cooked through. Slice and assemble as directed. The smoky grill flavor adds depth.
- Spicy Shrimp Wrap: Replace chicken with 1 1/2 lb peeled shrimp. Marinate in the same spice mix for 15 minutes, then sear for 2-3 minutes per side until pink and cooked through. Reduce searing time to avoid overcooking.
- Vegetarian Wrap: For a meatless version, use 2 cups of roasted chickpeas or grilled halloumi. Toss with the same spices and sear until charred. Proceed with the salad and sauce. The wrap is filling and flavorful.
- Crispy Chicken Wrap: After slicing the cooked chicken, toss it in a little extra hot sauce and then toast the assembled wraps for an extra crispy texture. You can also add a handful of crushed tortilla chips inside for crunch.
Storage and make-ahead

- Freezer
- Assembled wraps can be frozen for up to 1 month. Wrap each tightly in plastic wrap and then foil. Thaw overnight in the fridge before reheating.
- Reheat

Leftover wraps can be stored in an airtight container in the refrigerator for up to 2 days. Keep the sauce separate if possible.
To reheat, place the wrap in a dry skillet over medium heat for 2 to 3 minutes per side until warmed through and crispy. Avoid microwaving, as it makes the tortilla soggy. The cucumber tomato salad may release liquid, so pat dry before storing.
The chicken can be marinated up to 24 hours in advance. The spicy yogurt sauce can be made 2 days ahead and stored in the fridge. The cucumber tomato salad can be chopped and tossed in lemon juice and salt a few hours ahead, but drain any excess liquid before assembling.
You can also cook the chicken ahead and refrigerate it for up to 2 days, then slice and reheat in a hot skillet before assembling the wraps.
Serving ideas
Serve the wraps warm, sliced diagonally, with extra spicy yogurt sauce on the side for dipping. The sauce can be drizzled over the top as well. Pair with a simple green salad or roasted vegetables for a complete meal. These wraps are also great for lunchboxes, picnics, or game day spreads. They are handheld and easy to eat.
For a lighter option, serve the filling in lettuce cups instead of tortillas. You can also add extra fresh herbs like cilantro or mint for a bright finish. If you like more heat, add sliced jalapeños or a drizzle of hot sauce before rolling. The wraps are versatile and can be customized to your taste.

Juicy Spiced Chicken Wrap With Spicy Yogurt Sauce

Ingredients
- 2 lb boneless skinless chicken thighs
- 2 tbsp tomato paste
- 2 tbsp lemon juice
- 1 tsp black pepper
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tbsp Cajun seasoning
- 1 tsp onion powder
- 2 tbsp vegetable oil
- 1/2 cup plain yogurt
- 1/3 cup mayonnaise
- 3 tbsp hot sauce
- 1/2 tsp garlic powder
- 2 tbsp fresh parsley, chopped
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1 cup diced cucumber
- 1 tbsp lemon juice
- 1/2 tsp salt
- 4 leaves crisp lettuce
- 4 large flour tortillas
Instructions
- In a large bowl, combine the chicken thighs with tomato paste, lemon juice, black pepper, smoked paprika, garlic powder, Cajun seasoning, onion powder, and vegetable oil. Use your hands or tongs to coat every piece evenly. Cover and refrigerate while you prepare the sauce and salad, or for up to 30 minutes if the chicken is already at room temperature.
- In a small bowl, whisk together the plain yogurt, mayonnaise, hot sauce, garlic powder, and chopped fresh parsley until smooth and creamy. Taste and adjust the hot sauce if you prefer more or less heat. Cover and refrigerate until ready to use.
- In a medium bowl, combine the diced tomatoes, red onion, and cucumber. Drizzle with lemon juice and sprinkle with salt. Toss gently to combine. Set aside to let the flavors meld while you cook the chicken.
- Heat a large skillet over high heat until smoking hot. Add the marinated chicken thighs in a single layer (work in batches if needed). Cook without moving for 4 to 5 minutes until deeply browned and charred on the first side. Flip and cook another 4 to 5 minutes until the internal temperature reaches 165°F (74°C) in the thickest part. Transfer to a cutting board and let rest for 3 minutes.
- After resting, slice the chicken thighs into thin strips or bite-size pieces. Keep any juices from the cutting board and drizzle them over the sliced chicken for extra moisture and flavor.
- Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp towel and microwave for 30 seconds. Keep them covered so they stay pliable.
- Lay a warm tortilla on a flat surface. Place a lettuce leaf in the center. Top with a generous portion of sliced chicken, then a spoonful of the cucumber tomato salad. Drizzle with the spicy yogurt sauce. Fold in the sides and roll tightly from the bottom, tucking the filling as you go.
- Heat the same skillet over medium heat. Place the assembled wraps seam-side down in the skillet. Toast for 2 to 3 minutes per side until golden brown and crispy. Press gently with a spatula to ensure even browning.
- Transfer the toasted wraps to a cutting board. Slice each diagonally in half. Serve immediately with extra spicy yogurt sauce on the side for dipping.
