Before you start

Before starting, gather all ingredients and equipment. Pat the chicken thighs dry if they are wet. Measure the spices and have them ready. Dice the tomatoes, red onion, and cucumber, and chop the parsley. Set out the yogurt, mayonnaise, and hot sauce for the sauce.

Warm the tortillas just before assembling. Have a large skillet, mixing bowls, and tongs within reach. The entire process moves quickly once the chicken hits the pan, so having everything prepped ensures smooth cooking.

Instructions

Prep and marinate

  1. Marinate the chicken
In a large bowl, combine the chicken thighs with tomato paste, lemon juice, black pepper, smoked paprika, garlic powder, Cajun seasoning, onion powder, and vegetable oil. Use your hands or tongs to coat every piece evenly. Cover and refrigerate while you prepare the sauce and salad, or for up to 30 minutes if the chicken is already at room temperature.
Look for The chicken is evenly coated in a reddish-brown spice paste.
Tip For deeper flavor, let the chicken marinate in the fridge for up to 2 hours.
  2. Make the spicy yogurt sauce
In a small bowl, whisk together the plain yogurt, mayonnaise, hot sauce, garlic powder, and chopped fresh parsley until smooth and creamy. Taste and adjust the hot sauce if you prefer more or less heat. Cover and refrigerate until ready to use.
Look for The sauce is smooth, pale pink, and slightly thick.
Tip Use full-fat yogurt for a richer sauce that clings well to the wrap.
  3. Toss the cucumber tomato salad
In a medium bowl, combine the diced tomatoes, red onion, and cucumber. Drizzle with lemon juice and sprinkle with salt. Toss gently to combine. Set aside to let the flavors meld while you cook the chicken.
Look for The vegetables are lightly dressed and glossy.
Tip Dice the vegetables into small, uniform pieces so they fit easily inside the wrap.

The chicken is coated in a thick, reddish spice paste. The yogurt sauce is smooth and pale pink. The salad is glossy with lemon juice and salt. Everything is ready to cook.

The kitchen smells of paprika and garlic. The chicken is chilling in the fridge, the sauce is covered, and the salad is resting. You are ready to heat the skillet.

Sear the chicken

  1. Sear the chicken until charred
Heat a large skillet over high heat until smoking hot. Add the marinated chicken thighs in a single layer (work in batches if needed). Cook without moving for 4 to 5 minutes until deeply browned and charred on the first side. Flip and cook another 4 to 5 minutes until the internal temperature reaches 165°F (74°C) in the thickest part. Transfer to a cutting board and let rest for 3 minutes.
Look for The chicken has dark char marks and releases easily from the pan.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcrowd the pan; otherwise the chicken steams instead of charring.
  2. Slice the chicken
After resting, slice the chicken thighs into thin strips or bite-size pieces. Keep any juices from the cutting board and drizzle them over the sliced chicken for extra moisture and flavor.
Look for The slices are juicy and slightly pink in the center only if undercooked; fully cooked is white throughout.
Tip Slice against the grain for the most tender pieces.

The chicken is searing in a hot skillet, filling the kitchen with a smoky, spicy aroma. The edges are charring and the pan is sizzling. After flipping, the second side browns. The chicken is cooked through and reaches 165°F (74°C). The sliced pieces are juicy and glistening. The skillet is now empty and ready for toasting the wraps.

Assemble and toast

  1. Warm the tortillas
Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp towel and microwave for 30 seconds. Keep them covered so they stay pliable.
Look for The tortillas are soft, warm, and slightly pliable.
Tip Warm tortillas are less likely to crack when rolling.
  2. Assemble the wraps
Lay a warm tortilla on a flat surface. Place a lettuce leaf in the center. Top with a generous portion of sliced chicken, then a spoonful of the cucumber tomato salad. Drizzle with the spicy yogurt sauce. Fold in the sides and roll tightly from the bottom, tucking the filling as you go.
Look for The wrap is snug and the filling stays inside when rolled.
Tip Do not overfill; about 1 cup of filling per wrap is ideal.
  3. Toast the wraps until crispy
Heat the same skillet over medium heat. Place the assembled wraps seam-side down in the skillet. Toast for 2 to 3 minutes per side until golden brown and crispy. Press gently with a spatula to ensure even browning.
Look for The tortilla is golden brown with crisp spots.
Tip Toast in batches if needed; do not overcrowd the skillet.
  4. Slice and serve
Transfer the toasted wraps to a cutting board. Slice each diagonally in half. Serve immediately with extra spicy yogurt sauce on the side for dipping.
Look for The cut wraps show layers of lettuce, chicken, salad, and sauce.
Tip Use a serrated knife for a clean cut without squishing the filling.

The tortillas are warm and pliable. Each wrap is filled with lettuce, chicken, salad, and sauce, then rolled tightly. They toast in the skillet until golden brown and crisp. The wraps are sliced diagonally, showing the colorful layers. The extra sauce is on the side. The wraps are ready to serve.

Common mistakes

The most common mistake is overcrowding the skillet when searing the chicken. This traps steam and prevents charring. Cook in batches if needed. Another mistake is overfilling the tortillas, which makes them hard to roll and causes them to burst.

Stick to about 1 cup of filling per wrap. Also, skip toasting the wraps if you want, but you lose the crispy texture. Finally, do not skip the resting time for the chicken; it keeps the juices from running out.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part. The exterior should be deeply browned and charred in spots. The tortillas should be golden brown and crispy when toasted.

The wrap should feel firm and hold together when sliced. The filling should be hot, with the chicken warm and the salad still slightly crunchy. If the chicken is not yet at temperature, continue cooking in 1-minute increments and check again.
