Tips for success
Brown the beef harder than feels necessary. Deep browning is where the savory flavor comes from in a recipe with no sauce, so let the meat sit undisturbed in the hot skillet for a minute or two between stirs to build a crust of its own.
Season the beef, not the batter; the crust is neutral on purpose, and the filling should carry all the salt, garlic and herbs.
Shred the mozzarella from a block and keep it in a loose pile until the moment it goes on the beef. Cheese that sits in a compact mound clumps into a single dense layer, while a loose scatter melts into the batter as it rises and gives every slice an even, glossy pull.
If the top is browning faster than the center sets, lay a strip of foil over the pan for the last 10 minutes.
Variations
- Sausage Pie: Swap the ground beef for a pound of ground Italian sausage, browned and drained the same way. The fennel and spice in the sausage season the whole pie, so reduce the added salt to a quarter teaspoon and keep everything else unchanged.
- Veggie Pie: Brown 8 ounces of finely chopped mushrooms and diced bell pepper with the garlic powder in place of the beef, cooking until the vegetables release their water and it evaporates. Add the pepperoni back over the vegetables if a meaty note is still wanted.
- Spicy Pie: Stir a quarter teaspoon of crushed red pepper flakes into the beef with the seasonings and use sliced hot pepperoni. The heat blooming through the melted mozzarella is noticeable but not overpowering, and the crust stays exactly the same.
- Three-Cheese Top: Replace a third of the mozzarella with shredded provolone and grated Parmesan. Provolone melts into the batter like mozzarella, while the Parmesan browns faster on top and gives the finished pie a deeper, nuttier color.
Storage and make-ahead
- Fridge
- Cover and refrigerate within 2 hours; keeps up to 3 days.
- Freezer
- Wrap individual cooled slices tightly and freeze up to 2 months; thaw overnight in the refrigerator before reheating.
- Reheat
- Warm slices in a 350°F (175°C) oven for 10 minutes, or 60 to 90 seconds per slice in the microwave; the oven keeps the crust crisp.
Cool any leftover pie on the rack for no more than 2 hours, then cover the pan tightly or move the slices to an airtight container. It keeps in the refrigerator for up to 3 days, and the crust stays pleasantly firm rather than turning soggy.
Brown and season the beef up to a day ahead and keep it covered in the refrigerator; drain it again briefly before layering since it releases more liquid as it chills.
The batter is best mixed fresh, because the leavening in the baking mix starts working the moment it meets the liquid. With the beef ready, the whole assembly takes about 10 minutes on baking day.
Serving ideas
Serve the pie warm rather than piping hot; at 5 to 10 minutes out of the oven the cheese pulls in long, glossy strands instead of sliding off the slice. Cut it into six generous wedges with a sharp knife, wiping the blade between cuts so each slice shows clean layers. A pie server lifted straight from the pan keeps the crust intact on the way to the plate.
A simple green salad with a sharp vinaigrette balances the richness of the cheese and beef, and a sprinkle of extra Italian seasoning over the top just before serving wakes up the aroma.
Set the pan on the table on a trivet and let second servings be cut at the table; the slices hold their shape beautifully, and the cheese pull is the best part of watching it disappear.

Impossible Pizza Pie with a Golden Crispy Crust

Ingredients
- 1 lb ground beef, 85% lean
- 1/2 tsp garlic powder
- 1 tsp Italian seasoning, divided
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 3 oz pepperoni slices
- 1 1/2 cups shredded mozzarella
- 1 cup all-purpose baking mix
- 1 cup milk
- 2 large eggs
Instructions
- Position a rack in the center of the oven and heat it to 400°F (200°C). Grease a 9-inch pie pan with butter or a light film of oil, working it into the corners and up the sides so the crust releases cleanly after baking.
- Heat a 10-inch skillet over medium-high and add the ground beef, breaking it up with a wooden spoon as it browns. Cook until no pink remains, 6 to 8 minutes, then stir in the garlic powder, salt, black pepper and half of the Italian seasoning.
- Pour the browned beef into a fine strainer set over a heatproof bowl and let the fat drain off for a minute, gently shaking the pan. Return the drained beef to the skillet off the heat so it stays warm while the pan is prepared.
- Spread the warm beef evenly over the bottom of the greased pie pan, pressing it into a flat, even layer with the back of the spoon. Scatter the pepperoni slices over the beef, then shower the whole surface with the shredded mozzarella.
- In a medium mixing bowl, whisk the eggs with the milk until the yolks break and the mixture turns a uniform pale yellow. Add the all-purpose baking mix and the remaining Italian seasoning and whisk just until no dry streaks remain; a few small lumps are fine.
- Slowly pour the batter evenly over the filling in the pie pan, letting it seep down through the cheese and pepperoni. Transfer the pan to the center rack and bake at 400°F (200°C) for 30 to 35 minutes, until the top is deep golden and set.
- Pull the pie from the oven and set it on a wire rack for 5 minutes. The crust settles slightly and firms as it cools, which is what lets each slice come out clean instead of slumping apart on the server.
- Run a knife around the edge, then lift each slice with a pie server straight onto plates. The crust should hold firm, the mozzarella should stretch in long pulls, and the pepperoni should show its crisp, curling edges on every piece.
