Tips for success
For the best flavor, use a high-quality stout like Guinness Draught. The beer adds a malty depth that complements the pork beautifully. If you prefer a less intense beer flavor, use half stout and half beef broth.
The pearl onions can be left whole—they soften and become sweet. If you don't have pearl onions, a large yellow onion cut into wedges works just as well.
To make shredding easier, use two forks or a pair of tongs. The meat should fall apart with minimal effort. If you have extra time, let the shredded pork sit in the gravy for 15 minutes before serving to absorb more flavor. For a thicker gravy, remove the pork and simmer the liquid on the stovetop for 10 to 15 minutes until reduced.
Variations
- Spicy Guinness Pork: Add 2 chipotle peppers in adobo sauce and a teaspoon of smoked paprika to the slow cooker before cooking. The heat complements the stout's bitterness and adds a smoky depth.
- Honey-Mustard Glaze: After shredding, stir in 2 tablespoons honey and 1 tablespoon Dijon mustard. This adds a sweet-tangy note that pairs well with the malty gravy.
- Root Beer Pork: Replace the Guinness with 12 ounces of root beer and use a brown gravy. The soda adds sweetness and a hint of spice, creating a different but equally delicious flavor.
- Mushroom and Thyme: Add 8 ounces sliced cremini mushrooms and 2 teaspoons fresh thyme leaves to the slow cooker. The mushrooms soak up the gravy and add an earthy flavor that complements the pork.

Store leftover pork in an airtight container in the refrigerator for up to 4 days. The gravy will thicken as it cools.
To reheat, place in a saucepan over medium heat, adding a splash of beef broth or water if needed to loosen the sauce. The pork can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
This recipe is ideal for making ahead. Cook the pork as directed, shred it, and store it in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the slow cooker on low.
The flavors continue to meld, making it even better the next day. You can also assemble the raw ingredients in the slow cooker insert and refrigerate overnight, then cook the next day—just add 30 minutes to the cooking time.
Serving ideas
Serve the pulled pork on toasted brioche slider buns for a classic sandwich. Add a dollop of coleslaw or pickles for crunch, if desired. The pork also works well over mashed potatoes, egg noodles, or polenta, with extra gravy spooned over the top. For a low-carb option, serve it on a bed of greens or roasted vegetables.
This dish is hearty enough to be a main course on its own. Pair it with a simple green salad or roasted vegetables to balance the richness. For a pub-style meal, serve with crispy fries or onion rings.
The leftovers make excellent tacos, quesadillas, or even a topping for nachos. Let the pork shine—it needs little more than a warm bun and a spoonful of gravy.

Guinness Onion Brown Gravy Pork Shoulder: Slow-Cooker Pulled Pork

Ingredients
- 4 lb boneless Boston butt pork shoulder roast
- 2 cups peeled white pearl onions
- 1 bottle (12 oz) Guinness draught stout
- 2 cups rich brown gravy
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the pork shoulder roast in the center of the slow cooker. Scatter the pearl onions around the roast. Pour the Guinness stout over the meat and onions, then pour the brown gravy over the top. Dot the butter pats over the surface.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the pork is fork-tender and easily pulls apart. The internal temperature should register at least 145°F (63°C), but for shredding, cook until it reaches 200°F (93°C) for best texture. Let it rest for 3 minutes before slicing.
- Transfer the roast to a cutting board. Let it rest for at least 3 minutes, then use two forks to shred the meat into bite-sized ribbons. Discard any large pieces of fat. Return the shredded pork to the slow cooker and stir gently to coat with the gravy.
- Toast the brioche slider buns, if using. Pile the shredded pork and onions onto the buns and spoon extra gravy over the top. Serve hot.
