Tips for success
For the best texture, use freshly shredded cheese instead of pre-shredded, which often contains anti-caking agents that prevent smooth melting.
If you prefer a spicier kick, add a few dashes of hot sauce to the egg mixture or use pepper jack with jalapeños. You can also sprinkle a little smoked paprika on top before baking for extra depth.
This bake is versatile: you can add cooked breakfast sausage, crumbled bacon, or sautéed onions and bell peppers. If adding meat, make sure it's fully cooked before incorporating.
For a vegetarian version, keep it as is or add black beans and corn. The recipe is forgiving, so feel free to customize it to your taste.
Variations
- Add Sausage: Brown 1/2 pound of breakfast sausage and crumble it over the hash browns before adding the eggs. This adds a savory, meaty element that makes the bake even heartier.
- Swap the Cheese: Use shredded cheddar, Monterey Jack, or a Mexican blend instead of pepper jack. For a smoky flavor, try smoked gouda or a little crumbled cotija on top.
- Add Veggies: Sauté diced onions, bell peppers, or mushrooms and layer them with the hash browns. This adds sweetness and texture. You can also throw in some corn or black beans.
- Make It Spicy: Use hot green chiles or add a minced jalapeño to the egg mixture. For extra heat, sprinkle with red pepper flakes or a dash of hot sauce before baking.

Green Chile Hash Brown Egg Bake

Ingredients
- 4 cups frozen shredded hash browns, thawed
- 1 can (4 oz) diced green chiles
- 8 large eggs
- 1/2 cup whole milk
- 1 1/2 cups shredded pepper jack cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish. Spread the thawed shredded hash browns evenly over the bottom of the dish. Sprinkle the diced green chiles over the hash browns, distributing them evenly.
- In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until the yolks are completely broken and the mixture is smooth and slightly frothy.
- Slowly pour the egg mixture over the hash browns and chiles, making sure it covers the entire surface. Tilt the dish gently if needed to help the eggs settle evenly.
- Sprinkle the shredded pepper jack cheese evenly over the top of the egg mixture, covering the entire surface.
- Place the dish in the preheated oven and bake for 40 to 45 minutes, until the eggs are set and the cheese is melted and golden brown. The center should be firm to the touch and a knife inserted into the center should come out clean.
- Let the bake rest for 10 minutes before slicing. This allows the eggs to finish setting and makes cutting clean squares easier. Serve warm.
