Before you start

Before starting, take the frozen hash browns out of the freezer and let them thaw in the refrigerator overnight or on the counter for about 30 minutes. Pat them dry with paper towels to remove any excess moisture.

Grease the baking dish with butter or nonstick spray. Measure all the ingredients and have them ready. Heat the oven to 350°F (175°C) so it's fully preheated by the time the dish is assembled.

Ingredients at a glance (7)
  • 4 cups frozen shredded hash browns, thawed
  • 1 can (4 oz) diced green chiles
  • 8 large eggs
  • 1/2 cup whole milk
  • 1 1/2 cups shredded pepper jack cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Layer and Pour

  1. Layer the hash browns and chiles
Heat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish. Spread the thawed shredded hash browns evenly over the bottom of the dish. Sprinkle the diced green chiles over the hash browns, distributing them evenly.
Look for The hash browns form an even, compact layer covering the entire dish.
Tip If the hash browns are still icy, pat them dry with paper towels to remove excess moisture.
  2. Whisk the egg mixture
In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until the yolks are completely broken and the mixture is smooth and slightly frothy.
Look for The egg mixture is a uniform pale yellow with no streaks of yolk.
Tip Whisking thoroughly ensures the seasonings are evenly distributed.

At the end of this phase, the baking dish contains an even layer of hash browns and green chiles, covered with the egg mixture. The cheese is scattered on top, creating a speckled surface.

The dish looks colorful and inviting, with the yellow eggs and green chiles peeking through the white cheese. Everything is ready for the oven.

Bake to Golden

  1. Pour the eggs over the hash browns
Slowly pour the egg mixture over the hash browns and chiles, making sure it covers the entire surface. Tilt the dish gently if needed to help the eggs settle evenly.
Look for The egg liquid pools around the hash browns and seeps down to the bottom.
Tip Pouring slowly prevents the hash browns from shifting.
  2. Top with pepper jack cheese
Sprinkle the shredded pepper jack cheese evenly over the top of the egg mixture, covering the entire surface.
Look for The cheese forms a complete, even layer over the eggs.
Tip Use freshly shredded cheese for the best melting.

After baking, the top is golden brown and bubbling at the edges. The cheese has melted into a glossy, slightly browned crust. The hash browns have absorbed the egg custard and are tender. A knife inserted into the center comes out clean. The kitchen smells of toasted cheese and roasted chiles.

Rest and Slice

  1. Bake until set and golden
Place the dish in the preheated oven and bake for 40 to 45 minutes, until the eggs are set and the cheese is melted and golden brown. The center should be firm to the touch and a knife inserted into the center should come out clean.
Look for The edges are bubbling, the top is golden, and the center springs back when lightly pressed.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip If the top browns too quickly, cover loosely with foil for the last 10 minutes.
  2. Rest and serve
Let the bake rest for 10 minutes before slicing. This allows the eggs to finish setting and makes cutting clean squares easier. Serve warm.
Look for The bake has settled and holds its shape when sliced.
Tip Resting also makes the flavors meld together.

After resting, the bake has settled and holds its shape. Slicing through it yields neat squares with visible layers: the crispy hash brown base, the creamy egg middle, and the melted cheese top. The texture is moist but set, and the chiles are evenly distributed. Serve warm for the best flavor.

Common mistakes

One common mistake is not thawing the hash browns enough, which can leave the bake watery. Always pat them dry. Overbaking can dry out the eggs, so start checking at the 40-minute mark.

Underbaking leaves the center runny, so make sure the knife comes out clean. Also, avoid using a glass dish that is too small, as the eggs may overflow. Use the correct dish size and adjust time if needed.

How to tell it’s done

The bake is done when the eggs are fully set and the top is golden brown. The center should feel firm to the touch, and a knife inserted into the middle should come out clean.

The internal temperature should reach 160°F (71°C) for food safety. Let it rest for 10 minutes before slicing; this allows the eggs to finish setting and makes the squares easier to cut. The edges will be bubbling and slightly crispy.
