Tips for success
For the best texture, use a soft, enriched dough like brioche. If using store-bought dough, let it sit at room temperature for at least 30 minutes before shaping.
This makes it easier to stretch and seal. When pressing the dough into the cups, make sure the bottom is thin but not torn, and the edges overhang enough to cover the filling completely.
To achieve a deep golden color and a shiny crust, whisk the egg yolk with a teaspoon of water and brush it on evenly. You can also add a pinch of salt or a dash of milk to the egg wash. For extra flavor, sprinkle flaky sea salt on top along with the sesame seeds before baking.
Variations
- Spicy Jalapeño: Add sliced pickled jalapeños on top of the cheddar before sealing. Use pepper Jack cheese instead of cheddar for an extra kick. Serve with a cool ranch dip.
- Bacon BBQ: Replace the caramelized onions with crispy bacon bits and brush the inside of the dough with your favorite BBQ sauce before adding the filling. Use smoked cheddar for a deeper flavor.
- Mushroom Swiss: Sauté sliced mushrooms with the onions and use Swiss cheese instead of cheddar. The earthy mushrooms pair beautifully with the beef and cheese.
- Breakfast Bomb: Swap the beef patty for a cooked breakfast sausage patty, add a scrambled egg (cooked to set), and use American cheese. Serve with maple syrup for dipping.
Storage and make-ahead
- Fridge
- Keep leftover bombs in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore crispness.
- Freezer
- Wrap each cooled bomb tightly in plastic wrap and place in a freezer bag. Thaw overnight in the fridge, then reheat in a 350°F (175°C) oven for 15 minutes.
- Reheat
- Reheat bombs in a 350°F (175°C) oven for 8-10 minutes until warmed through and cheese is melted. For frozen bombs, bake at 350°F (175°C) for 20-25 minutes.
Store leftover cheeseburger bombs in an airtight container in the refrigerator for up to 3 days.
To reheat, place them on a baking sheet and warm in a 350°F (175°C) oven for 8-10 minutes, or until heated through and the cheese is melted. Avoid microwaving, as it can make the dough soggy.
The filling components—caramelized onions, grilled tomato, and seared beef patties—can be prepared up to 2 days ahead and refrigerated. The dough can also be made ahead and kept in the refrigerator overnight; bring it to room temperature before shaping.
Assemble the bombs just before baking, or assemble and refrigerate unbaked for up to 24 hours; bake directly from the fridge, adding a few extra minutes.
Serving ideas
Serve the cheeseburger bombs warm, straight from the oven, for the best cheese pull. They are satisfying on their own, but a side of crispy fries, a simple green salad, or pickles complements them well.
For dipping, offer ketchup, mustard, or a creamy burger sauce. These bombs are also great for parties—just cut them in half to show off the gooey filling.
If serving a crowd, keep the bombs warm on a baking sheet in a low oven (200°F/95°C) for up to 30 minutes. They are best enjoyed fresh, but the dough stays tender for a while. For a brunch twist, serve them with a fried egg on top. The possibilities are endless.

Golden Cheeseburger Bombs with Soft Yeast Dough

Ingredients
- 1 lb homemade or store-bought soft yeast dough
- 4 slices yellow cheddar cheese
- 4 seared beef burger patties (about 4 oz each)
- 1 large tomato, grilled
- 1 cup caramelized onions
- 1 large egg yolk
- 1 tbsp white sesame seeds
Instructions
- Lightly flour a work surface. Divide the soft yeast dough into 4 equal pieces. Roll each piece into a ball, then flatten into a 5-inch round. Press each round into a small ceramic cup, letting the edges overhang. Place a slice of cheddar in the bottom of each dough-lined cup.
- Place a grilled tomato slice over the cheddar in each cup. Add a seared beef patty on top, pressing gently. Spoon a generous pile of caramelized onions over the patty, filling the cup to the top.
- Gather the overhanging dough up and over the filling. Pinch and twist the seams tightly at the top to completely enclose the filling in a neat round bun ball. Ensure there are no gaps.
- Carefully invert the dough balls onto a parchment-lined baking sheet, seam side down. In a small bowl, whisk the egg yolk with 1 tablespoon of water. Brush the tops of the dough balls with the egg wash.
- Sprinkle the white sesame seeds evenly over the egg-washed dough balls, covering the tops generously.
- Bake in a preheated oven at 375°F (190°C) for 20 minutes, until the dough is puffed and golden brown. The internal temperature of the beef patties should reach 160°F (71°C).
- Remove the baking sheet from the oven and let the bombs rest for 3 to 5 minutes. This allows the cheese to set slightly and prevents burns when tearing open.
- Serve the cheeseburger bombs warm, whole or torn open to reveal the melted cheddar and juicy filling. Enjoy immediately.
