Tips for success
For the most flavorful meatballs, use ground beef with a bit of fat, such as 80/20. The fat keeps them moist and adds richness to the sauce.
If you prefer leaner meat, add a tablespoon of olive oil to the meatball mixture to compensate. Also, let the meatballs rest for a few minutes after shaping; this helps them hold their shape better.
To make the dish ahead, assemble everything up to the point of baking, but do not add the cheese. Cover and refrigerate for up to 24 hours.
When ready to bake, add 10 minutes to the cooking time. The cheese can be added during the last 10 minutes of baking. This is a great make-ahead meal for busy weeknights.
Variations
- Spicy Harissa Twist: Add 1 tablespoon of harissa paste to the meatball mixture and use harissa instead of chili flakes for a smoky, spicy kick. Serve with a dollop of yogurt to cool the heat.
- Lamb and Mint: Replace the ground beef with ground lamb and add 2 tablespoons of chopped fresh mint to the meatballs. Use mint instead of parsley for a fresh, aromatic flavor.
- Vegetarian Version: Swap the ground beef with a plant-based ground meat alternative and use vegan cheese. Add a tablespoon of olive oil to the meatball mixture to keep it moist.
- Cheese-Stuffed Meatballs: Insert a small cube of mozzarella or kashar cheese into the center of each meatball before baking. The cheese melts inside, creating a gooey, surprise center.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until piping hot.
- Freezer
- Freeze the unbaked dish (without cheese) for up to 3 months. Thaw overnight in the refrigerator, then bake as directed, adding extra time.
- Reheat
- Reheat leftovers in a 350°F (175°C) oven for 15-20 minutes, or in the microwave in 30-second bursts until hot.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or in a 350°F (175°C) oven until warmed through. The flavors often deepen after a day, making it even more delicious the next day.
The meatballs can be shaped and the vegetables prepped a day in advance. Store them separately in the refrigerator. The sauce can also be whisked together ahead of time.
When ready to bake, assemble the dish and cook as directed. This makes the recipe perfect for entertaining or meal prep.
Serving ideas
Serve this Turkish-style baked meatball dish with warm crusty bread or fluffy rice to soak up the flavorful sauce. A simple green salad with a lemon vinaigrette balances the richness of the cheese and meat. For a more substantial meal, add a side of roasted potatoes or bulgur pilaf.
Garnish with fresh parsley or a sprinkle of sumac for a bright, tangy finish. The dish is satisfying on its own, but a dollop of plain yogurt on the side adds a cooling contrast to the spicy, savory flavors.
Pair it with a glass of Turkish red wine or a refreshing ayran for a complete experience.

Golden Baked Meatballs with Peppers and Melted Cheese

Ingredients
- 500 g ground beef
- 1 grated onion
- 1 clove garlic, minced
- 4 tbsp breadcrumbs
- 50 ml sparkling water
- 2 tbsp fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili flakes
- 1 tsp salt
- 2 onions, sliced
- 3 green peppers, sliced
- 2 red capia peppers, sliced
- 4 cloves garlic, sliced
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp chili flakes
- salt to taste
- 1/2 tbsp tomato paste
- 1/2 tbsp red pepper paste
- 1 1/2 cups hot water
- 1 1/2 cups grated kashar cheese
Instructions
- In a large bowl, combine the ground beef, grated onion, minced garlic, breadcrumbs, sparkling water, chopped parsley, cumin, paprika, chili flakes, and salt. Use your hands to mix everything until just combined; do not overmix. Shape the mixture into plump, round meatballs, about 1.5 inches in diameter. Set them aside on a plate.
- In the bottom of a large baking dish, scatter the sliced onions, green peppers, red capia peppers, and sliced garlic. Drizzle with olive oil, then sprinkle with oregano, chili flakes, and salt. Toss everything with your hands to coat the vegetables evenly in the oil and seasonings.
- Nestle the meatballs evenly among the seasoned vegetables in the baking dish, tucking them slightly into the vegetables so they stay moist. In a small bowl, whisk together the tomato paste, red pepper paste, and hot water until smooth. Pour the sauce evenly over the meatballs and vegetables.
- Tear a large piece of parchment paper, crumple it into a loose ball, then flatten it and wet it lightly under running water. Place the damp parchment directly over the baking dish, tucking it around the edges. Transfer to the oven and bake at 350°F (175°C) for 30 minutes, until the vegetables are tender and the meatballs are cooked through.
- Carefully remove the baking dish from the oven and discard the parchment paper. Sprinkle the grated kashar cheese evenly over the meatballs and vegetables. Return the dish to the oven, uncovered, and broil for 5 minutes, until the cheese is melted, browned, and bubbly.
- Remove the baking dish from the oven and let it rest for 5 minutes. Use a large spoon to scoop out portions of meatballs with the peppers and melted cheese onto warm serving plates. Spoon any extra sauce from the dish over the top. Serve hot.
