Imagine a baking dish filled with juicy, herby meatballs nestled among sweet roasted peppers and onions, all bathed in a rich tomato sauce and topped with a golden, bubbly blanket of melted cheese.

This Turkish-style baked meatball dish, known as fırın köfte, brings together the deep flavors of cumin, paprika, and chili flakes with the sweetness of caramelized peppers. It is a one-pan dinner that looks as impressive as it tastes, and the cheese pull is absolutely irresistible.

This recipe transforms simple ingredients into a comforting, hearty meal that feels both rustic and special. The combination of grated onion in the meatballs keeps them incredibly moist, while the sparkling water adds a light, airy texture.

Baking everything together in one dish allows the flavors to meld, and the final broil creates a beautifully browned cheese crust. Serve it with crusty bread or rice to soak up the delicious sauce.

Why this recipe works

The grated onion in the meatball mixture does more than add flavor — it releases moisture as the meatballs bake, keeping them tender and juicy.

The sparkling water also contributes to a lighter texture by introducing tiny air bubbles that expand during cooking, resulting in a soft, almost fluffy interior. These two ingredients work together to prevent the ground beef from becoming dense and dry.

Baking the meatballs directly on top of the seasoned vegetables means the juices from the meat drip down and flavor the peppers and onions as they roast.

The damp parchment paper traps steam initially, which helps cook everything through gently without drying out. Then, removing the cover and broiling the cheese creates a contrast between the creamy melted topping and the caramelized vegetables underneath.

Notes and substitutions

Kashar cheese is a Turkish semi-hard cheese that melts beautifully and browns well. If it is not available, mozzarella or provolone are excellent substitutes. The red pepper paste adds a subtle sweetness and depth; if you cannot find it, use extra tomato paste and a pinch of smoked paprika. Fresh herbs like parsley brighten the dish, but dried herbs can work in a pinch.

Use a large baking dish that holds the vegetables in a single layer to ensure even roasting. A 9x13-inch dish works well. When shaping the meatballs, keep them uniform in size so they cook evenly. Avoid overmixing the meat mixture, as that can make the meatballs tough. For the best texture, handle the mixture as little as possible.

  • kashar cheese: Mozzarella or provolone can be used instead; they melt well and brown nicely.
  • red pepper paste: Use 1 tablespoon tomato paste plus 1/2 teaspoon smoked paprika for a similar depth.
  • sparkling water: Plain water or milk can replace the sparkling water, though the texture will be slightly denser.
  • red capia peppers: Use 2 red bell peppers for a sweeter, milder flavor.
