Tips for success
For the most tender beef, always cook on LOW if time allows. The longer, gentler heat breaks down collagen more effectively than HIGH.
If you're in a rush, HIGH for 5 to 6 hours works, but the texture won't be quite as silky. Also, don't skip the butter—it adds a richness that balances the savory broth.
To make the gravy even more luxurious, whisk a tablespoon of cornstarch with a little cold water and stir it in during the last 30 minutes of cooking.
This will thicken the sauce without altering the flavor. If you prefer a smoother sauce, you can strain the onions out before serving, but they add wonderful texture and sweetness.
Variations
- With Mushrooms: Add 8 ounces of sliced cremini mushrooms along with the onions. They'll release moisture and add an earthy depth that pairs beautifully with the beef and gravy.
- Spicy Kick: Stir in 1 teaspoon of smoked paprika and 1/2 teaspoon of cayenne pepper with the gravy for a subtle smoky heat. Serve with pickled jalapeños on the side.
- Herb-Infused: Tuck a few sprigs of fresh thyme and rosemary around the roast before cooking. Remove the herb stems before shredding. The herbs add a bright, aromatic note.
- Cheesy Topped: After shredding, sprinkle the beef with shredded Gruyère or Swiss cheese and let it melt under the broiler for a few minutes. This turns it into a French onion soup–style casserole.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat on the stovetop over medium-low heat, stirring occasionally, until hot. Add a little beef broth to loosen the gravy if it has thickened.
Store leftover beef and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much.
This dish is ideal for making ahead. Assemble everything in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the chilled ingredients. The cooked roast also freezes beautifully for up to 3 months.
Serving ideas
Spoon the shredded beef and onions over creamy mashed potatoes, buttered egg noodles, or polenta. The gravy soaks into the starch, making every bite rich and satisfying.
For a low-carb option, serve over roasted cauliflower mash or sautéed greens. A side of crusty bread is perfect for sopping up the extra sauce.
For sliders, pile the beef onto toasted brioche buns and top with a slice of melted Gruyère or provolone. The combination of sweet onions, savory beef, and melted cheese is irresistible. You can also serve it as a hearty filling for tacos or quesadillas. Leftovers make excellent sandwiches the next day.

French Onion Slow Cooker Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 2 large Vidalia onions, thinly sliced
- 1 cup beef consommé
- 2 cups rich brown gravy
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. Scatter the sliced Vidalia onions over and around the roast. Pour the beef consommé around the base, then pour the rich brown gravy over the top. Dot the surface with the butter pats.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the beef is fork-tender and easily shreds. Avoid lifting the lid during cooking to keep the heat steady.
- Transfer the roast to a cutting board and let it rest for at least 3 minutes. Using two forks, shred the beef into bite-size pieces, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir gently to coat with the gravy.
- Turn the slow cooker to HIGH, cover, and let the shredded beef simmer in the gravy for 15 to 20 minutes so the flavors meld and the sauce thickens slightly. Stir once halfway through.
- Taste the gravy and season with salt and pepper if needed. Keep in mind that the consommé and gravy may already be salty, so add cautiously. If the sauce is too thick, splash in a little beef broth to loosen it.
- Spoon the shredded beef and onions over mashed potatoes, egg noodles, or toasted slider buns. Use a slotted spoon for sandwiches to avoid soggy bread. Ladle extra gravy over the top.
