Tips for success
For the best flavor, use a high-quality beef consommé or homemade beef broth. The consommé adds depth and richness that plain broth might lack.
If you prefer a thicker gravy, you can mix a tablespoon of cornstarch with water and stir it into the sauce during the last 30 minutes of cooking.
This recipe is forgiving: you can add extra onions or garlic if you like. The pork can be cooked on HIGH for a shorter time, but LOW is recommended for maximum tenderness.
If you have leftovers, the pork tastes even better the next day as the flavors meld.
Variations
- Cheesy French Onion: After shredding, top the pork with slices of Swiss or Gruyère cheese and broil until melted and bubbly. Serve over toasted baguette slices for a French onion soup-inspired meal.
- Spicy Kick: Add 2 sliced jalapeños or a teaspoon of red pepper flakes with the onions for a spicy version. The heat balances the rich butter and sweet onions.
- Herb Garden: Stir in fresh thyme, rosemary, or sage during the last hour of cooking. These herbs complement the garlic butter and add a fresh, aromatic note.
- Beer-Braised: Replace half the beef consommé with a dark beer, such as a stout or porter. The beer adds malty depth and pairs well with the pork and onions.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water to loosen the gravy.
- Freezer
- Freeze the pork and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a little broth or water if the mixture seems dry.
Store leftover pork in an airtight container in the refrigerator for up to 4 days. The gravy will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of broth or water if needed to loosen the sauce.
This dish can be made up to 2 days ahead. Prepare the recipe as directed, then cool and refrigerate. Reheat gently on the stovetop or in the slow cooker until warmed through. The flavors will deepen, making it even more delicious.
Serving ideas
Serve the pork over buttered egg noodles, mashed potatoes, or crusty bread to soak up the rich gravy.
A side of steamed green beans or a simple salad balances the richness. For a classic French onion twist, top with melted Swiss cheese and broil briefly until bubbly.
For a casual dinner, pile the pork onto soft rolls for sliders. The gravy doubles as a dipping sauce.
Garnish with fresh parsley or thyme if desired, though the dish is flavorful on its own. This meal is hearty enough to satisfy the biggest appetites.

French Onion Garlic Butter Pork Shoulder: Slow-Cooker Dump Dinner

Ingredients
- 4 lb boneless Boston butt pork shoulder roast
- 3 cups thinly sliced Vidalia onions
- 1 cup beef consommé
- 4 tbsp cowboy garlic butter, cut into thick medallions
Instructions
- Place the pork shoulder roast in the center of a 6-quart slow cooker. Pile the sliced Vidalia onions over and around the roast. Pour the beef consommé around the base, avoiding the top of the roast to keep the butter in place.
- Place the cowboy garlic butter medallions evenly on top of the roast and onions. The butter will melt and baste the meat as it cooks.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and shreds easily. The onions will caramelize and the butter will create a rich gravy. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the pork rest in the liquid for at least 10 minutes. This allows the juices to redistribute and makes shredding easier.
- Transfer the roast to a cutting board and shred with two forks, discarding any large fat pieces. Return the shredded pork to the slow cooker with the onions and gravy, stirring to coat.
- Spoon the shredded pork and onion gravy over warm buttered egg noodles or your favorite side. Serve immediately.
