Tips for success
For the cleanest cuts, use a very sharp knife and wipe it with a damp paper towel between cuts. This prevents the phyllo from tearing and keeps the diamonds neat.
If the phyllo cracks while layering, simply press it together; the butter will seal it during baking. Do not worry about perfection—the layers will hide minor flaws.
To keep the baklava crisp, store it in an airtight container at room temperature for up to a week. If it softens, you can reheat it in a 300°F (150°C) oven for 5-10 minutes to restore the crunch. Serve at room temperature for the best texture and flavor.
Variations
- Walnut Baklava: Replace the pistachios with finely chopped walnuts for a classic Turkish variation. Toast the walnuts lightly before using to deepen their flavor.
- Honey Syrup: Substitute 1/2 cup of the sugar with honey, and reduce the water to 3/4 cup. The honey adds a floral note and a deeper color.
- Spiced Baklava: Add 1/2 teaspoon of ground cinnamon and a pinch of ground cloves to the pistachio layer. This adds warmth and complexity.
- Chocolate Pistachio: Sprinkle 1/2 cup of finely chopped dark chocolate over the pistachio layer before adding the top phyllo sheets. The chocolate melts during baking for a decadent twist.
Storage and make-ahead
- Fridge
- Do not refrigerate baklava; it will absorb moisture and lose its crisp texture. Store at room temperature in an airtight container.
- Freezer
- Freeze baked and syrup-soaked baklava in a single layer in an airtight container for up to 3 months. Thaw at room temperature for 2 hours before serving.
- Reheat
- To restore crispness, reheat frozen or stored baklava in a 300°F (150°C) oven for 5-10 minutes. Let cool slightly before serving.
Store leftover baklava in an airtight container at room temperature for up to 1 week. Do not refrigerate, as this will soften the layers.
If the climate is humid, you can keep it in a cool, dry place. The baklava actually improves after a day as the syrup fully penetrates the layers.
Baklava is an excellent make-ahead dessert. Prepare it completely and let it rest for at least 4 hours, or overnight, before serving.
It can be stored at room temperature for up to a week, making it perfect for parties and holidays. You can also freeze the baked, syrup-soaked baklava for up to 3 months.
Serving ideas
Serve baklava at room temperature, arranged on a platter with the diamond shapes facing up. Each piece should be lifted carefully with a fork or small tongs to preserve the layers.
A cup of strong Turkish coffee or a glass of cold milk complements the sweetness beautifully.
For a special presentation, you can sprinkle a few extra crushed pistachios over the top just before serving, though the video does not show this. The baklava is rich, so small pieces are satisfying. Offer it as a dessert after a meal or as a sweet treat with tea.

Forty-Layer Antep Pistachio Baklava with Crispy Phyllo

Ingredients
- 40 sheets tissue-thin baklava phyllo dough
- 1 1/2 cups clarified butter, melted
- 2 1/2 cups finely ground Antep pistachios
- 2 cups granulated sugar
- 1 cup water
- 1 tbsp fresh lemon juice
Instructions
- In a small saucepan, combine the sugar, water, and lemon juice. Bring to a boil over medium heat, stirring occasionally, then reduce to a simmer and cook for 10 minutes. Remove from heat and let cool completely. Meanwhile, gently unfold the phyllo sheets on a clean surface and cover with a damp towel to prevent drying.
- Brush the bottom and sides of a round copper pan or baking dish with clarified butter. Lay one sheet of phyllo in the pan, letting the edges curl up slightly. Brush the sheet generously with melted clarified butter. Repeat with 19 more sheets, brushing each one thoroughly.
- Sprinkle the finely ground pistachios evenly over the top of the twenty buttered phyllo layers, covering the entire surface in a thin, even layer.
- Place one sheet of phyllo over the pistachios and brush with clarified butter. Continue with the remaining 19 sheets, brushing each layer generously with butter. Make sure the top sheet is well-buttered to promote golden browning.
- Using a sharp knife, cut the layered pastry into diamond shapes, about 2 inches wide. Cut all the way through to the bottom. Pour the remaining clarified butter evenly over the cuts, making sure it seeps into the crevices.
- Heat the oven to 340°F (170°C). Bake the baklava for 50 minutes, until the top is deep golden amber and the layers are visibly crisp. Rotate the pan halfway through for even browning.
- Remove the baklava from the oven and immediately pour the cooled syrup evenly over the hot pastry. Listen for the sizzle as the syrup hits the hot layers. Let the baklava absorb the syrup for at least 4 hours before serving.
- Allow the baklava to cool completely at room temperature, uncovered, so the layers stay crisp. Once cooled, lift a piece with a fork to admire the forty distinct layers. Serve at room temperature.
