Tips for success
For extra flavor, brush the crust edges with olive oil or melted butter before baking. This helps them brown beautifully and adds richness.
You can also sprinkle a little dried oregano or red pepper flakes on top for a boost. If you like a crisper bottom, bake the pizzas directly on a preheated baking sheet or pizza stone.
When freezing, flash-freeze the pizzas on a baking sheet for 30 minutes before bagging. This prevents them from sticking together.
To reheat, place frozen pizzas on a baking sheet and bake at 375°F for 10–12 minutes, or until hot and crispy. Avoid microwaving, as it makes the crust chewy.
Variations
- Vegetarian: Omit the sucuk sausage and add extra bell peppers, mushrooms, or olives. You can also use a plant-based sausage alternative for a meaty texture without the meat.
- Spicy: Add sliced jalapeños or a drizzle of hot honey after baking. You can also mix some red pepper flakes into the tomato sauce for an extra kick.
- Margherita Style: Skip the sucuk and corn, and top with fresh mozzarella slices, fresh basil leaves, and a drizzle of balsamic glaze after baking. This gives a classic Italian flavor.
- Breakfast Mini Pizzas: Top the crusts with scrambled eggs, cooked bacon bits, and cheddar cheese. Bake as directed, and serve for a hearty breakfast or brunch.

Leftover mini pizzas can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or regular oven to restore crispness. They are best enjoyed within a day or two, but they stay delicious for a few days.
The dough can be prepared up to 24 hours in advance and kept in the refrigerator after the first rise. Let it come to room temperature before shaping.
You can also assemble the pizzas completely and refrigerate them for a few hours before baking. For longer storage, freeze the unbaked pizzas and bake directly from frozen, adding a few minutes to the baking time.
Serving ideas
Serve these mini pizzas hot, straight from the oven, as a snack, appetizer, or light meal. They pair well with a simple green salad or a bowl of soup.

These pizzas are also great for meal prep. Make a batch on the weekend and freeze them for quick weekday lunches. Pack them in lunchboxes or enjoy them as an after-school snack. They are satisfying and portable, making them perfect for picnics and potlucks. Just reheat and serve.

Fluffy Mini Pizzas That Freeze Perfectly

Ingredients
- 3/4 cup warm milk
- 1/4 cup warm water
- 2 tbsp olive oil, plus more for brushing
- 2 1/4 tsp instant yeast
- 1 tsp sugar
- 1 tsp salt
- 3 cups all-purpose flour, plus more for dusting
- 1 cup garlic tomato sauce
- 2 cups shredded mozzarella cheese
- 6 oz Turkish sucuk beef sausage, sliced
- 1 cup diced bell peppers
- 1/2 cup sweet corn kernels
Instructions
- In a large bowl, combine the warm milk, warm water, olive oil, instant yeast, sugar, and salt. Stir to dissolve the yeast. Add the flour and mix with a wooden spoon until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 5–7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm spot for about 1 hour, or until doubled in size.
- Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a smooth ball. Place the balls on a lightly floured surface and cover with a towel to rest for 10 minutes. Then, using a glass or small bowl, press down in the center of each ball to create a rimmed mini pizza crust. The edges should stay thicker while the center is flattened.
- Arrange the shaped crusts on a baking sheet lined with parchment paper. Spoon about 2 tablespoons of garlic tomato sauce onto each crust and spread it evenly, staying within the rim. Sprinkle with shredded mozzarella, then top with slices of sucuk sausage, diced bell peppers, and sweet corn. Press the toppings lightly into the cheese so they stick during baking.
- Preheat the oven to 390°F (199°C). Bake the mini pizzas for 15 minutes, or until the edges are puffed and golden and the cheese is bubbly with brown spots. Remove from the oven and let cool on the baking sheet for a few minutes before serving.
- Transfer the mini pizzas to a serving platter. Serve warm, straight from the oven, or let them cool completely and then freeze for later. To freeze, place the cooled pizzas in a single layer on a baking sheet and freeze until firm, then transfer to a zip-top freezer bag or airtight container.
