Tips for success
For the fluffiest pancakes, make sure your baking powder is fresh—it loses potency over time. Whisk the wet ingredients thoroughly to incorporate air, and handle the batter gently when folding in the add-ins.
Use a nonstick skillet and a light coating of butter or oil to ensure easy flipping and a beautiful golden crust. If you prefer crispier edges, cook the pancakes slightly longer over medium-low heat.
These pancakes are versatile—try adding chopped spinach, sun-dried tomatoes, or olives for different flavor profiles. You can also make mini pancakes for a fun appetizer or brunch platter.
Serve them with a dollop of Greek yogurt or a drizzle of honey for a sweet-savory contrast. Leftovers can be stored in the refrigerator and reheated in a toaster or skillet for a quick breakfast.
Variations
- Spinach and Feta: Replace the red bell pepper with 1/2 cup chopped fresh spinach and add a pinch of nutmeg to the batter. The spinach adds color and a mild, earthy flavor that pairs beautifully with feta.
- Mediterranean Herb: Swap the dill for a mix of fresh oregano, thyme, and parsley. Add a handful of chopped Kalamata olives for a briny kick. This version is perfect for a Mediterranean-themed brunch.
- Spicy Chorizo: Substitute the sucuk with diced spicy chorizo and add a finely chopped jalapeño for extra heat. Use pepper jack cheese instead of feta for a melty, spicy filling.
- Vegetarian Delight: Omit the sausage and add 1/2 cup of sautéed mushrooms and zucchini. Increase the feta to 3/4 cup for extra creaminess. This version is hearty and satisfying without the meat.
Storage and make-ahead
- Fridge
- Store leftover pancakes in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or toaster for best texture.
- Freezer
- Freeze cooked pancakes in a single layer on a baking sheet, then transfer to a zip-top bag for up to 2 months.
- Reheat
- Reheat pancakes in a toaster or on a skillet over medium heat for 2-3 minutes per side until hot and crisp. Microwave is okay but will soften the texture.
Store leftover pancakes in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a toaster or on a skillet over medium heat for 2-3 minutes per side, until warmed through and crisp.
They can also be reheated in a microwave, but the texture will be softer. For longer storage, freeze the pancakes in a single layer on a baking sheet, then transfer to a zip-top bag.
You can prepare the batter up to 24 hours in advance and store it covered in the refrigerator. The baking powder will still work, though the pancakes may be slightly less fluffy. Cook the pancakes as directed, adding a minute or two to the cooking time if the batter is cold. Alternatively, cook the pancakes fully and reheat them as needed.
Serving ideas
Serve these savory pancakes hot off the skillet, stacked high on a plate. They're wonderful with a side of scrambled eggs, roasted tomatoes, or a simple green salad.
For a brunch spread, pair them with fresh fruit and a cup of Turkish tea. The combination of feta, dill, and sucuk makes them a satisfying meal on their own, but they also shine alongside other breakfast favorites.
For a more indulgent serving, top the pancakes with a poached egg and a drizzle of hot sauce or a dollop of sour cream. The runny yolk adds richness, while the sour cream cools the spice. You can also serve them with a side of yogurt mixed with garlic and cucumber for a refreshing contrast. However you serve them, these pancakes are sure to be a hit at your table.

Fluffy Feta & Sucuk Pancakes with Dill

Ingredients
- 2 large eggs
- 1 cup whole milk
- 1/4 cup olive oil
- 1 tsp salt
- 1 packet baking powder (10g)
- 1 1/2 cups all-purpose flour
- 1/2 cup crumbled feta cheese
- 1/2 cup diced red bell pepper
- 1/4 cup finely chopped fresh dill
- 1/2 cup diced sucuk sausage
Instructions
- In a large bowl, crack the eggs and whisk them with the milk, olive oil, salt, and baking powder. Whisk vigorously for about 30 seconds until the mixture is frothy and well combined.
- Add the all-purpose flour to the wet mixture. Stir with a spatula or whisk just until no dry flour remains. The batter will be thick but still pourable.
- Gently fold the crumbled feta, diced red bell pepper, chopped dill, and diced sucuk sausage into the batter until evenly distributed. The batter will look chunky and colorful.
- Place a nonstick skillet over medium heat and add a small pat of butter or a drizzle of oil. Let it melt and shimmer, but do not let it smoke.
- Using a ladle or a 1/4-cup measure, scoop the batter onto the hot skillet. Cook 2 to 3 pancakes at a time, leaving space between them so they can spread.
- Let the pancakes cook undisturbed for about 2 minutes, until bubbles appear on the surface and the edges look set and golden brown.
- Use a spatula to flip each pancake carefully. Cook for another 2 minutes, until the second side is golden brown and the pancake is puffed and cooked through.
- Transfer the cooked pancakes to a plate and stack them high. Serve warm, pulling one open to reveal the steaming pockets of melted feta and juicy sausage.
