Pull apart a golden, pillowy roll and watch molten chocolate flow from a zebra-striped swirl. This two-tone poğaça combines soft, buttery yeast dough with layers of white and dark chocolate, baked until the outside is golden and the inside is tender and molten.
The dramatic swirl makes it as beautiful as it is delicious, and the chocolate center is a surprise in every bite.
This recipe creates a stunning two-tone swirl bread that looks like a work of art but comes together with simple ingredients. The dough is soft and supple, enriched with milk and oil, then divided and colored with cocoa.
After a short rest, the two doughs are rolled, layered, and shaped into crescents filled with chocolate spread. Baked until golden, each roll pulls apart to reveal a beautiful zebra pattern and a molten chocolate center.
Ingredients
- 1 cup warm milk (200ml)
- 1 cup warm water (200ml)
- 1/2 cup vegetable oil (100ml)
- 1 packet instant yeast (11g)
- 1 egg white
- 3 tbsp sugar
- 1 tsp salt
- 4 1/2 cups all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 2 tbsp cold milk
- 100 g unsalted butter, softened
- 1 cup chocolate spread
- 1 egg yolk, beaten
Why this recipe works
The two-tone effect comes from stacking a white dough and a chocolate dough, then rolling them together. As the dough bakes, the layers puff and separate slightly, creating the distinctive swirl. The contrast between the pale and dark doughs is visually striking, and the chocolate flavor in the darker layers adds depth without overpowering.
The molten center is achieved by placing a spoonful of chocolate spread at the base of each wedge before rolling. As the roll bakes, the spread heats and becomes liquid, creating a gooey pocket.
The butter in the dough adds richness and helps the layers stay tender, while the short rest allows the gluten to relax, making the rolls pillowy and light.
Notes and substitutions
Use instant yeast for a quick, reliable rise. The warm milk and water should be about 110°F (43°C) — warm to the touch but not hot. If the liquid is too hot, it can kill the yeast. The egg white adds structure, while the oil keeps the crumb soft. All-purpose flour works well; bread flour will give a chewier texture.
For the chocolate spread, choose a thick, spreadable variety. A hazelnut-chocolate spread works well, or use a dark chocolate spread for a more intense flavor.
The cocoa powder in the dough is unsweetened, so the sweetness comes from the sugar and the spread. If the dough feels dry when kneading in the cocoa, add the cold milk gradually to help it come together.
- vegetable oil: melted unsalted butter or a neutral oil like canola or sunflower
- unsalted butter: salted butter, and reduce the added salt to 1/2 teaspoon
- chocolate spread: chopped dark chocolate or a mix of chocolate chips and a little cream
- all-purpose flour: bread flour for a slightly chewier texture, or a gluten-free 1:1 blend for a softer crumb (add 1/2 teaspoon xanthan gum if not included)
