Tips for success
For the best texture, don’t overmix the cranberry base — just toss until the sugar and orange juice coat the berries. The cake mix should be sprinkled evenly, and the butter slices should be placed close together but not overlapping.
This ensures even melting and a consistent crust. If you have time, let the butter soften slightly before slicing, so it spreads more easily, but cold butter works fine too.
The mascarpone cream can be made ahead and refrigerated for up to 2 days, but whip it again briefly before serving to restore its fluffiness. For a more pronounced orange flavor, add a teaspoon of orange extract along with the zest.
If you prefer a less sweet dessert, reduce the sugar in the cranberry layer to 1/3 cup, or use a sugar-free cake mix. The white chocolate chips can be omitted or replaced with dark chocolate for a different twist.
Variations
- Spiced Cranberry: Add 1 teaspoon of ground cinnamon and 1/2 teaspoon of ground ginger to the cranberry mixture before adding the cake mix. The warm spices complement the tart berries and make the cake even more festive.
- Apple-Cranberry: Replace 1 cup of the cranberries with 1 cup of diced peeled apples (such as Granny Smith). Toss the apples with the cranberries and proceed as directed. The apples add a softer texture and a gentle sweetness.
- Chocolate-Cranberry: Swap the white chocolate chips for dark chocolate chips and use a chocolate cake mix instead of white. The deep chocolate flavor pairs surprisingly well with the tart cranberries and orange zest.
- Citrus Burst: Add the zest of 1 lemon and 1 lime along with the orange zest. Use lemon juice instead of orange juice for a brighter, more complex citrus flavor. This variation is especially refreshing after a heavy meal.
Storage and make-ahead
- Fridge
- Store leftover cake in an airtight container in the refrigerator for up to 5 days. Keep the mascarpone topping separate.
- Freezer
- Freeze the cooled cake (without topping) in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat in the microwave or oven.
- Reheat
- Reheat individual servings in the microwave for 30–45 seconds, or place the whole cake in a 300°F (150°C) oven for 10 minutes until warmed through.
Store leftovers in an airtight container in the refrigerator for up to 5 days. The cake will absorb some of the cranberry sauce, making it more moist — this is normal.
To reheat, microwave individual servings for 30–45 seconds until warm, or warm the entire cake in a 300°F (150°C) oven for 10 minutes. The mascarpone topping should be kept separately and spooned over each serving just before eating.
You can assemble the entire cake (without cooking) up to 24 hours in advance. Cover the slow cooker insert and refrigerate. When ready to cook, add 15–20 minutes to the cooking time because the ingredients will be cold. The mascarpone topping can be made up to 2 days ahead and stored in the fridge; re-whip briefly before serving. The fully cooked cake also freezes well for up to 3 months.
Serving ideas
Serve this cake warm, straight from the slow cooker, with a generous dollop of the orange mascarpone cream. The contrast between the warm, jammy cranberries and the cold, silky cream is what makes this dessert so special.
For a festive presentation, garnish each bowl with a few extra fresh cranberries and a twist of orange zest. It’s perfect for holiday dinners, potlucks, or a casual weekend treat.
This dessert pairs beautifully with a scoop of vanilla ice cream or a drizzle of heavy cream, but the mascarpone topping is really all you need. If you have extra topping, use it as a spread for scones or pancakes the next morning. The cake is also delicious the next day, served cold or reheated, though it’s at its best within the first few hours.

Slow-Cooker Cranberry Orange White Chocolate Dump Cake

Ingredients
- 4 cups fresh cranberries
- 1/2 cup orange juice
- 2 tbsp orange zest
- 1/2 cup granulated sugar
- 1 box (15.25 oz) white cake mix
- 1 cup white chocolate chips
- 1/2 cup (1 stick) unsalted butter, sliced
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 2 tbsp confectioners' sugar
- 1 tsp orange zest
Instructions
- Place the fresh cranberries in the slow cooker. Pour the orange juice over them, then sprinkle with the orange zest and granulated sugar. Stir well to coat every berry evenly.
- Sprinkle the white cake mix evenly over the cranberry mixture. Scatter the white chocolate chips on top, then arrange the sliced butter pieces over the cake mix, covering as much surface as possible.
- Cover the slow cooker and cook on HIGH for 2.5 hours. Do not open the lid during cooking. The cranberries will pop and release their juice, creating a ruby jam underneath while the top becomes a golden, caramelized crust.
- In a small bowl, combine the mascarpone cheese, heavy cream, confectioners' sugar, and orange zest. Beat with an electric mixer on medium speed until soft peaks form, about 2 minutes. Do not overbeat.
- Scoop the warm cake into bowls, making sure to get some of the cranberry jam from the bottom. Top each serving with a generous dollop of the orange mascarpone cream.
